How to preserve food in the summer

Food is an essential daily need for every family. However, some foods, if not properly preserved, can pose a risk of developing infectious gastrointestinal diseases, causing food poisoning, and even potentially leading to cancer in the long term, especially during the hot and humid summer months like now.

The reason is that in the summer, high temperatures and humidity create favorable conditions for bacteria to thrive, which is the cause of many food poisoning incidents and foodborne illnesses. In addition, poor environmental hygiene, the proliferation of insects and flies, the lack of clean water in some rural areas, and the use of unsanitary ice also significantly increase the risk of food safety issues. Furthermore, many foods spoil due to improper storage by consumers. This not only leads to waste but also poses a potential health risk. According to health experts, there are many reasons for food spoilage, and understanding these causes will help improve food preservation during the hot summer weather.

Dr. Lam Van Tung, former Head of the Emergency Department at Ca Mau General Hospital, advises: "To keep food fresh for longer and avoid food poisoning, consumers should separate and refrigerate food within 2 hours of cooking, maintaining the refrigerator temperature at the necessary level to regulate the environment in both the refrigerator and freezer compartments."

Typically, in cases where food spoilage occurs due to improper storage methods, yeast is the main cause. This is because yeast is a group of microorganisms capable of growing in both oxygen-rich and oxygen-free environments. It causes fermentation, altering flavor, creating sour or unpleasant odors, and sometimes causing food containers to bulge and burst if internal pressure increases. In addition, mold is also a type of microorganism that grows rapidly, especially in humid conditions. Mold commonly appears on products such as grains, beans, and nuts; therefore, storing these foods in a dry and airy environment is crucial to prevent mold growth. Another risk that consumers should be aware of is insects such as flies, ticks, moths, and weevils, which not only damage food but also carry microorganisms or various pathogens. Therefore, consumers should equip themselves and their families and loved ones with the necessary knowledge on how to preserve and use food safely while avoiding waste due to spoilage.

Among these, the most effective and common methods are preservation using organic acids; using salt and sugar for marinating; heating and freezing; and drying food. Currently, to preserve food for longer periods, people often choose to dry food using drying equipment, which is quick, efficient, easy, saves time and costs, and provides convenience for users.
