How to make beef and scallop rice
Step 1: First, you need to wash the rice thoroughly and then soak it in water for 30 minutes. Soak the mushrooms until soft, wash them and cut them into thin slices.
Step 2: Wash the scallops and drain. Then, add 10g of shredded ginger and 20ml of white wine and soak for about 5 minutes, then rinse with clean water. Peel the carrots, then wash and shred them into thin strips.
Step 3: Slice the beef into thin slices across the grain. Next, in a bowl, add a little flour and a diluted salt water mixture, stir well and soak the beef for about 5 minutes. Then take the beef out and rinse it several times to remove excess blood and remove the fishy smell. After rinsing, gently squeeze out the water with your hands.
Step 4: Prepare an electric pan or use a rice cooker. Pour oil into the pot, add minced garlic, shiitake mushrooms, and scallops and stir-fry until fragrant. Then add shredded carrots and beef, continue to stir-fry evenly, add oyster sauce, soy sauce, and a little dark soy sauce for color. If you use the usual stir-fry method on the stove, it will only take about 5-8 minutes.
Step 5: Then take out the soaked rice, stir-fry it with the ingredients. If you use a rice cooker to stir-fry, then add enough water. Note that the amount of water is still calculated in the same ratio as when you cook rice normally. In case you use an electric pan to stir-fry the ingredients, then pour everything into the rice cooker, add water and press the cook button.
