Rich and flavorful fish porridge from Tich Nghi

BAC NINH - Bac Ninh is not only famous for its rich traditional culture but also for its incredibly diverse cuisine. The people of Bac Ninh are discerning eaters, so the local specialties easily win the hearts of visitors from all over. Among them, Tich Nghi fish porridge is one of the famous dishes loved by many.

This fish porridge dish originated from the family of Mrs. Tich Nghi in Ve An ward (now Kinh Bac ward). In 1977, the family rented a small shop to sell porridge and built a famous fish porridge brand throughout Kinh Bac. To this day, this brand remains famous throughout Bac Ninh and neighboring provinces.

Besides the largest restaurant, Tich Nghi, there are other fish porridge restaurants in the area such as Chin Muoi, Ngoc Ha, and 158. These are all owned by Tich Nghi's children, grandchildren, or neighbors. However, Tich Nghi's restaurant is always the busiest. Despite the long wait, customers still flock there in droves.

Located about 100 meters from National Highway 1A, these fish porridge stalls are always a popular stop for tourists passing through the area. Anyone coming from the North or returning from Hanoi always tries to stop by to enjoy this local specialty.

Tich Nghi fish porridge is unlike other porridges. It's cooked to a thick, creamy consistency, with the fish meat evenly coated, a golden color, and topped with aromatic herbs. A steaming hot bowl of porridge, with its fragrant aroma, is incredibly appealing, without any fishy or strong smell.

When eating, diners will experience the sweet, tender taste of the simmered rice, the rich, fresh flavor of the fish, and the fragrant aroma of the blended vegetables. All these elements combine to create a perfect bowl of fish porridge, both in taste and aroma. Interestingly, the porridge also contains a small amount of fish roe. The roe is fried to a golden brown; though there's not much of it, it's incredibly rich and delicious.

The delicious fish porridge at Tich Nghi is made with carp and grass carp, whose meat is sweet, fragrant, tender, and chewy. Diners can add a little pepper, garlic vinegar, and dried chili peppers. Especially noteworthy is the addition of a bowl of chili fish sauce. This can be added to enhance the spicy, rich, and unforgettable flavor.
