As part of the series of events of the 2024 Binh Dinh Land and Sea Quintessence Festival, organized by the People's Committee of Binh Dinh province, the Seafood Food Festival, OCOP Fair and Binh Dinh Province Craft Villages will feature a performance of ocean tuna filleting by Mr. Tatsuhiko Itano, a Japanese chef, and his associates.
A 50kg, 1.4m long tuna caught offshore by fishermen from Binh Dinh was filleted into bright red pieces of meat by chef Tatsuhiko Itano.

Then, the tuna fillets are processed by talented chefs from Ho Chi Minh City, Japan and Australia into creative, nutritious and delicious dishes to entertain diners.
According to chef Tatsuhiko Itano, tuna in Vietnam is very delicious, especially tuna in Binh Dinh.
Mr. Tatsuhiko Itano prepares 3 types of knives to cut and fillet the tuna, each segment will use a separate type of knife.
"I'm very nervous about performing tuna filleting in front of many people, but I will try my best to satisfy everyone," said Mr. Tatsuhiko Itano.
Deputy Director of Binh Dinh Department of Industry and Trade Nguyen Dinh Kha said: "Binh Dinh is a province with many specialties, of which catching ocean tuna is a strength, tuna products are consumed domestically and in many countries around the world. We want to promote the Binh Dinh ocean tuna brand to tourists and international friends, thereby contributing to the development of the local economy ."
