Dong Tao commune (Khoai Chau district) has long been famous for its Dong Tao chicken – a rare breed of chicken in Vietnam. Recognizing the increasing consumer demand for processed chicken products, Giang Tuan Vu (born in 1990) from Dong Tao Nam village, Dong Tao commune, decided to diversify his product range with many ready-to-eat dishes made from Dong Tao chicken.

Born in a rural area famous for its Dong Tao chickens, Mr. Vu has loved and been attached to this breed since he was a child. As he grew up, he chose to start his business raising and developing Dong Tao chickens, at its peak raising around 3,000 birds.
Since his family had a tradition of making Vietnamese sausage, in 2019 Mr. Vu thought about using Dong Tao chicken meat to make sausage. After many failed trial production attempts, he developed his own recipe to process this product with a delicious and unique flavor...
Mr. Vu's Dong Tao chicken sausage is made primarily from Dong Tao chicken meat, along with pork and various spices such as lime leaves, shiitake mushrooms, fish sauce, and pepper. The chicken meat used is the thigh and skin, diced, while the breast meat is finely ground and mixed with pork, shiitake mushrooms, chopped lime leaves, and pepper. The sausage is wrapped in banana leaves and tightly tied with bamboo strips, then steamed for about 60 minutes. After steaming, it is removed from the steamer, allowed to cool, and then vacuum-sealed in plastic bags with labels before being sold. The sausage can be stored in the refrigerator for about 15-30 days.
According to Mr. Vu, the secret to making delicious chicken sausage is using fresh ingredients, especially roosters raised for 9 to 12 months, weighing between 4 and 4.5 kg.
Since its introduction to the market, Dong Tao chicken sausage has always been popular with customers. From 2020, Mr. Vu stopped raising chickens and focused on processing products from Dong Tao chickens. He invested in building a 400m2 production workshop and purchased processing equipment such as grinders, slicers, and chicken turning machines. On average, he produces 100 to 200 kg of chicken sausage per day, and during the Lunar New Year, he sells 25 to 30 tons.
Currently, his family's chicken sausage sells for 300,000 to 350,000 VND/kg. In 2022, the product was certified as a 3-star OCOP product by the Provincial People's Committee. In addition, he also processes other products from Dong Tao chicken such as cartilage sausage, hot dogs, salt-cured chicken with peppercorns, etc. To expand the market, Mr. Vu actively promotes, introduces, and sells processed products made from Dong Tao chicken meat through social media platforms like Facebook, Zalo, and TikTok, with online sales accounting for up to 80% of total production.
From selling Dong Tao chicken products, Mr. Vu earns over 500 million VND per year.
