The simmering process is also very meticulous, requiring a charcoal-fired stove. Before simmering, the bones must be washed by boiling water. After washing, they are brought to a boil, then the heat is reduced, the pot is covered tightly, and the simmering continues over low heat, avoiding high flames, until the bones are very tender.
