Amidst a plethora of modern confectionery products, cereal biscuits quietly reach customers through provincial and district-level campaigns promoting Vietnamese products. Therefore, it's not uncommon to find stalls demonstrating the cereal biscuit production process at traditional cake festivals.

Having been involved in the cereal-making business for many years, Mr. Nguyen Duc Tan (Xom Moi Hamlet, Bien Bach Dong Commune, Thoi Binh District) shared: “I have been doing this job for more than 10 years, and my sister, who shares the same passion, accompanies me on these trips. Besides selling at home, I also do it on the go. Wherever there are festivals, my sister and I will set up a stall, demonstrating the cakes and selling them on the spot to customers.”

Similar to rice tube cakes, cereal cakes come in long, bar-shaped pieces, cut into segments about 1 meter long, then rolled into circles and packaged in various weights. The ingredients consist of five types of flour mixed with white sugar. This mixture is then put into a cake-making machine with an iron mold, and after about 15-20 minutes, a crispy, fragrant cake is produced.

The process of making the cakes is simple, so only two people are needed. (In the photo: Mr. Tan is in charge of pulling the cakes and his sister will handle the packaging).

"The key to making this cake is to mix the ingredients evenly so that the finished cake isn't too sweet, and to carefully monitor the oven temperature to ensure the cake is perfectly cooked, crispy, and fluffy. This dish is loved by many because it's fun to eat, and older people especially enjoy it with hot tea," Tấn said.

Although making a living this way requires traveling far and wide, enduring the hardship of eating out, the bakers still keep the passion for their craft alive, preserving the traditional, simple flavors of folk cakes.
