Besides the signature dishes, in the highland villages of Thanh Hoa, tourists can enjoy rustic, authentic mountain cuisine. Currently, at famous community tourism destinations such as Pu Luong (Ba Thuoc district), But village (Quan Hoa district), Ben En (Nhu Thanh district), Ma village (Thuong Xuan district), Muong Lat district, etc., stream fish is an indispensable part of the meal.

Stream fish are small fish that usually live in streams flowing from the mountains to larger rivers. The stream water is clear and unpolluted, so the fish are very clean and fresh. There are many species of stream fish (such as the "na" fish, "lun" fish, river goby, and loach), each with different names depending on the region. For example, in Ben En, there is a type of fish called "na" fish, but in the highlands of Quan Hoa and Muong Lat, it is called "mat" fish (or "khinh" fish).

"The catfish is a thick-bodied fish with firm and sweet flesh. Local people often catch them to grill or dry them and store them in the attic, only bringing them out to offer to honored guests. Nowadays, the fish are caught in large quantities to supply tourist destinations, so the fish population is increasingly depleted," shared a resident of Xuan Thai commune, in the Ben En community tourism area, Nhu Thanh district.

Stream fish can be prepared in many ways, such as in a banana blossom soup, fried, or grilled, but the best way is still grilled. When grilled over a hot fire, the fish retains its sweetness, firmness, and rich flavor. It is often served with wild herbs like fig leaves, wild eggplant, chili peppers, or with raw vegetables such as lettuce, mustard greens, coriander, and basil. Especially, the fish is eaten with a dipping sauce – a characteristic condiment of the highlands – which gives this dish its unique character.

In order to protect and sustainably exploit stream fish species, many highland villages in Thanh Hoa have implemented regulations prohibiting indiscriminate fishing and exploitation, including specific regulations on fishing times and the use of electric shock devices.

"The local authorities must issue regulations prohibiting fishing during the breeding season, and when fishing does take place, the entire village participates to share the resources. Thanks to this, in recent years, the fish population has increased significantly," said Mr. Luc Van Tam, Secretary of Muong Chanh commune, Muong Lat district.
