Below is a simple and easy recipe for bamboo shoot and pork knuckle soup that anyone can make at home, allowing them to showcase their culinary skills and treat their family to a delicious meal.
Ingredient:
- Pork leg: 1 piece
- Dried bamboo shoots: 300 grams

Soak dried bamboo shoots overnight, then rinse them several times with water and boil them for 5-10 minutes. Drain and rinse again. You can boil the bamboo shoots 2-3 times, rinsing them repeatedly to remove odors and discoloration.
After boiling, squeeze out the excess water from the bamboo shoots. You can tear them into smaller pieces (if they are large and thin) or trim off any tough parts (if present). If the bamboo shoots have already been sliced into strips, this step is not necessary.
Wash the pork trotters thoroughly with coarse salt, lemon juice, or a little white wine to remove any odor. It's best to choose the front trotters as they have more meat and taste better than the hind trotters.
You can ask the seller to help chop the pork leg into bite-sized pieces to avoid it breaking apart, with the meat sticking to the bone, which would affect the quality of the bamboo shoot soup.
Boil the pork trotters briefly with a few slices of ginger, a little seasoning, and one dried onion, then remove, rinse, and drain.
Once the pork leg is dry, marinate it with a little seasoning powder, fish sauce, and finely chopped dried onions.
