When it comes to Quang Ngai cuisine , besides dishes like don (a type of shellfish) and Tra River goby fish, grilled pork skewers are also one of the dishes loved by many tourists.
A college friend of mine told me that during a culinary exploration at the "Quang Ngai Countryside Colors" event held in Ho Chi Minh City, the "Peacock Tail Grilled Pork Skewers" stall impressed her with its flavor and unique preparation method. Recently, she returned to Quang Ngai to explore the beauty of the natural landscape and enjoy the local cuisine, especially the grilled pork skewers at the Peacock Tail restaurant.

Upon arriving at the restaurant, we were impressed by the delicious plate of fresh vegetables served with the grilled pork skewers, including thinly sliced unripe bananas and various herbs such as mint, basil, lettuce, and perilla leaves... I instructed my friend on how to eat it: place your favorite vegetables on a thin rice paper wrapper, then wrap it together with the grilled pork skewers and dip it in the dipping sauce.
The dish called "ram" consists of shrimp and chopped scallions. Thin rice paper wrappers are used to wrap the shrimp and scallions, then skewered onto bamboo tongs and grilled. The griller must quickly turn the rams, otherwise they burn easily because the rice paper is very thin. Grilled pork skewers, beef, and beef grilled with betel leaves are delicious because they are grilled over hot charcoal, making this dish even more appealing.
My friend was impressed with this dish, from the ingredients and the way the spring rolls were wrapped to the meat and the dipping sauce. I asked him, "Do you know what makes grilled pork spring rolls so delicious?" "Perhaps it's the dipping sauce," he replied. "The sauce is made from tomatoes and lean pork, seasoned to taste. When eating, sprinkle some crushed peanuts on top for added aroma," Mr. Phan explained.
Taking a bite of the grilled pork and fresh vegetables wrapped in rice paper, you'll immediately hear the crisp crackling sound of the wrapper breaking apart. The sweetness of the shrimp and meat, the rich flavor of the dipping sauce, and the freshness of the vegetables all blend together, creating a harmonious and delicious dish.
