Located 50km northwest of Ha Tinh city center, Duc Tho boasts a diverse range of traditional crafts such as carpentry, boat building, pottery, hat making, and clam harvesting. It is also famous for its vermicelli making. Like other vermicelli, it's made from rice, which is soaked and then ground with water to create a sticky, pliable rice flour. The flour is then left to ferment, the sour water is drained off, and it's pressed and cut into dough balls. The dough balls are then kneaded in clean water to form a liquid, filtered to remove impurities, and finally pressed into vermicelli molds. However, Duc Tho vermicelli has its own unique characteristics. Unlike commercially available rice noodles, which are often processed using modern machinery, rice noodles from Duc Tho retain their traditional, handcrafted quality. Because they are made by hand, the noodles are thick, round, and light brown, as they are not bleached. To make this type of noodle, the makers must use rice from Duc Tho, which is soaked and fermented for up to five days. They must also know the right time to remove the rice from the fermentation process to create the perfect color, like the color of betel flowers – that's the key to success. Perhaps, for those unfamiliar, the color might not be visually appealing, but perhaps that unique characteristic is what makes this type of noodle so special.
Duc Tho vermicelli can be served with various meats, fish, and fresh vegetables… but the dish that leaves a lasting impression on diners is undoubtedly beef vermicelli.
To make a delicious bowl of beef noodle soup, besides the noodles made from rice grown in Duc Tho, the beef must also come from cattle raised in the riverside areas of Duc Tho village, ensuring the meat is tender and sweet. The broth is simmered from beef bones and tail. During the broth preparation, the chef must be very meticulous; the bones must be thoroughly washed until all the blood is removed, and the foam on the simmering broth must be regularly skimmed off to keep the broth clear. The beef should be sliced slightly thick for a more tender and sweeter taste. Green onions, cilantro, chili fish sauce, minced garlic, pepper, and a squeeze of lime are the perfect accompaniments for a bowl of beef noodle soup.
