Rice porridge is available in many places, but the version in Ha Tinh has its own unique flavor.

The noodles in this noodle soup are made from wheat flour, giving them a chewy and elastic texture. After kneading the dough, the noodles are cut into strips about two-thirds the length of a chopstick, and they are opaque white in color. The broth of the noodle soup has a sweet flavor from the simmered bones, the aroma of shallots, the richness of shrimp, a few slices of pork sausage, a pinch of green onions, cilantro, and a few slices of chili peppers – all of which make this dish incredibly appealing.
