Local specialties such as goat meat, crispy rice, Non Khe rice cakes, Gia Vien shrimp paste, free-range chicken, upland sticky rice, and Muong pork have long been associated with the working lives of the local people. Through the skillful hands of the locals, these delicious dishes have become familiar to tourists from near and far. Notably, these traditional dishes are now also included on the menus of many high-end hotels and restaurants.

Mountain goat meat – a famous, delicious, and nutritious dish – is often the top culinary choice for tourists visiting Ninh Binh . Meanwhile, crispy rice is also an indispensable part of the culinary culture of the ancient capital. Nowadays, this dish is conveniently prepared and packaged for tourists to take with them, rather than just being a specialty on the banquet table as before. Tourists can easily buy these specialties in many localities of Ninh Binh, but most commonly in Hoa Lu city, Trang An Eco-tourism area, or specialty supermarkets, with prices around 300,000 VND per box of crispy rice (containing 10 bags) or 400-500,000 VND per kilogram of goat meat...

When visiting Ninh Binh, tourists shouldn't miss Gia Vien shrimp paste. It's no coincidence that this dish is associated with the entire region. Behind it lie stories of the arduous struggle for survival of generations of people in the low-lying rice paddies, a touch of the land and sky, of the gentle rivers… These stories can make your trip much more interesting. To buy this specialty, besides stalls at tourist spots, visitors can experience the bustling atmosphere of local traditional markets, where the price of shrimp paste ranges from 150,000 to 250,000 VND per kilogram.

One unique aspect of Ninh Binh is that even during peak tourist season, not only goat meat, crispy rice, and Gia Vien shrimp paste, but also other specialties maintain stable prices compared to other times of the year. Ms. Phuong, a restaurant owner in Hoa Lu city, shared: "We only adjust prices when the price of ingredients increases or decreases, and we always try to keep prices as stable as possible, hoping to create a more positive impression on tourists."

Recognizing that local culinary specialties are crucial for tourism development, especially community-based tourism, many small business owners and restaurant owners in Ninh Binh are increasingly aware of the need to improve quality and maintain stable prices to attract tourists and contribute to making the rich culinary culture of the ancient capital region more widely known.
