In Vietnam, there are many delicious types of fish sauce, with each region having its own unique flavor. Among them, one type of fish sauce from the North stands out for its rich, thick consistency, captivating countless diners. This is Diem Dien fish sauce, a specialty from the sea that has been voted a "high-quality Vietnamese product."

The selection of ingredients is crucial in creating the famous Diem Dien fish sauce. Early in the morning, people flock to the harbor to select and purchase fresh, large anchovies, scad, or white shrimp from fishing boats. After washing and draining, the fish are fermented in earthenware jars and vats at a ratio of 10 kg of fish to 2 kg of salt. According to locals, the best fish sauce is fermented in old, sun-dried earthenware jars and vats because sun exposure helps retain heat, ensuring the quality of the sauce. After about half a month, when the sun is strong, the lids are opened to dry the fish, and a clean bamboo stick is used to stir it until it dissolves completely. The fermentation continues for another year. Next comes the filtering process. The fish sauce is filtered multiple times through sieves, sieves, and clean cloths until the liquid becomes clear, at which point the scum on the surface is removed.
The method for making fermented shrimp paste is slightly different. After a few days, when the shrimp have absorbed the salt evenly, they are placed on a sieve or rubbed to collect the liquid that drips down. The collected liquid is poured into jars or containers and left in a well-ventilated area. On sunny days, these containers are opened to keep the fish sauce fragrant.
After completing the above steps, the fish sauce will be sun-dried until it turns a golden color like honey, becomes thick and viscous, and has a distinctive aroma.
