Unlocking the value of chili peppers.

Driven by the desire to create lasting value for chili peppers, Ms. Vo Thi Le (40 years old, Go Noi commune), Director of Go Noi Clean Agricultural Products Cooperative, created Go Noi chili paste using traditional processing technology to preserve its authentic flavor.

With the advantage of being a food technology engineer working in processing companies for over 25 years, Ms. Le recognized that the Go Noi chili plant not only had the potential to be processed into a spice but also helped unlock the value of the chili plant, creating a distinctive local product. This idea gradually grew and motivated her to return to her hometown to establish the Go Noi Clean Agricultural Products Cooperative in early 2025 with 7 members. The cooperative develops its main products as chili paste, chili powder, chili salt, and pickled chili, priced from 28,000 to 75,000 VND per box depending on weight.

Ms. Le said that despite having access to nearly 4,700 hectares of chili peppers grown by local people according to VietGAP standards, she is still struggling to define her market segment, production process, capital, and human resources. She hopes that her chili sauce will not simply be a product, but will be developed into a local tourism product that reaches international standards.

Overcoming all difficulties, she and her colleagues were determined to accumulate experience and research to improve the formula. To date, their chili sauce product has gradually become more accessible to customers through wholesale and retail sales, and is displayed in specialty stores, supermarkets, and tourist destinations in the area.

While other chili sauces are cooked and finely ground, the cooperative chooses to simmer them slowly over a wood fire to preserve their authentic spiciness. This difference is what makes Go Noi simmered chili sauce a preferred choice for customers, who appreciate its fragrant, thick, and smooth texture compared to other chili sauces on the market. After more than a year since its launch, the cooperative has maintained its traditional handcrafted process, with meticulous quality control throughout the finished product, from ingredients and processing to flavor and aroma.

The Go Noi chili sauce product won first prize in the Quang Nam Province Startup Talent Competition 2025 and the New Agricultural Horizon Award in the Green Startup Competition 2025, organized by the Association of High-Quality Vietnamese Goods Businesses in collaboration with the Center for Business Research and Support.

“During the process of making chili sauce and other chili products, a lot of chili seeds are discarded. I learned that chili seeds contain capsaicin, which can be applied in the production of cosmetics and the food industry. I want to apply science and high technology to enhance the value chain of chili plants. In particular, I want to focus on extracting and purifying the active ingredient capsaicin. Through this, I aim to build a closed-loop chili production ecosystem from farm to product using high technology, helping to transform traditional agricultural production models into high-value-added agriculture, and supporting farmers in increasing their income,” Ms. Le shared.

From March 2025, the chili paste will officially be available on the market. Each month, the cooperative produces nearly 200 kilograms of fresh chili peppers, generating revenue of approximately 30 million VND. To date, monthly production has increased by 20% compared to the initial output, and the number of repeat customers has significantly increased. The cooperative has boldly invested in advanced drying and vacuum packaging equipment and is actively building its brand and expanding its distribution network nationwide.
