On the afternoon of September 19th, at the Valley of Love tourist area, the Lam Dong - Da Lat Tourism Association organized a competition showcasing the preparation of 100 delicious dishes made from Da Lat artichokes, aiming to spread the culinary traditions of artichoke-based cuisine throughout the country and the world . Twenty teams (each with 3 chefs) from restaurants and hotels in Lam Dong province and several other provinces and cities participated in the competition.

In his opening remarks at the competition, Mr. Nguyen Huu Huong, Chairman of the Lam Dong Provincial Chefs Association and Head of the Judging Panel, stated that this event is part of a series of tourism activities celebrating the 130th anniversary of Da Lat's formation and development, contributing to bringing many Da Lat agricultural products, including artichoke, a valuable medicinal herb, into delicious, beautiful, and attractive dishes.
According to Mr. Huong, this is also an opportunity for chefs nationwide to connect, share, and develop their skills. The event, which will feature the simultaneous preparation and demonstration of 100 dishes made from Da Lat artichokes, will be announced as setting a Vietnamese culinary record.
Artichoke is a medicinal herb that can be processed into many delicious dishes.
Artichoke is a valuable medicinal plant and food originating from Europe, cultivated in Da Lat for nearly 100 years. Artichokes are beneficial for bile production, stabilizing and helping the liver detoxify, purifying the body, cooling the liver, nourishing the kidneys, preventing atherosclerosis, and lowering cholesterol.
In recent years, dishes made from artichokes have consistently been ranked among the high-end dishes of Vietnamese cuisine. In early April 2023, the Asian Record Organization recognized nine new Asian records for Vietnamese dishes and groups of dishes and specialties, including Da Lat artichokes.

Traditionally, artichokes have been commonly used to make tea or in simple dishes. However, through the skillful hands of chefs, artichokes are transformed into 100 unique and delicious dishes such as: artichoke and sturgeon cartilage soup, chicken and artichoke hot pot, Phu Quoc fish roe with mixed artichokes and flowers, H'Mong chicken stewed with four-season artichokes, pigeon stewed with artichokes and fresh ginseng, fried rice with artichoke and colorful sturgeon rolls, artichoke mooncakes, and more.

This is also an opportunity to honor the culinary skills of chefs from the Lam Dong Professional Chefs Association, tourism businesses, and food service establishments in Lam Dong province and across the country.
