100 unique delicious dishes from Dalat artichoke

On the afternoon of September 19, at the Valley of Love tourist area, Lam Dong - Da Lat Tourism Association organized a contest to promote the preparation of 100 delicious dishes from Da Lat artichokes to spread the cuisine made from artichokes throughout the country and the world . Participating in the contest were 20 teams (each team had 3 chefs), from restaurants and hotels in Lam Dong province and some provinces and cities in the country.

Speaking at the opening ceremony of the contest, Mr. Nguyen Huu Huong, Chairman of Lam Dong Province Chefs Association, Head of the jury, said that this event is part of a series of tourism activities celebrating the 130th anniversary of Da Lat's formation and development, contributing to turning many Da Lat agricultural products, including artichoke, a precious medicinal herb, into delicious, beautiful and attractive dishes.

According to Mr. Huong, this is an opportunity to connect, share, and develop the skills of chefs across the country. The event of preparing and promoting 100 dishes from Da Lat artichokes at the same time will be announced to set a Vietnamese culinary record.

Artichoke has the effect of promoting bile secretion, stabilizing and helping the liver detoxify, purify the body, cool the liver, nourish the kidneys, prevent atherosclerosis, lower cholesterol...

In recent years, dishes made from artichokes have always been ranked in the list of high-class dishes of Vietnamese cuisine. In early April 2023, the Asia Records Organization recognized 9 new Asian records for Vietnamese dishes and groups of dishes and specialties, including Da Lat artichokes.

The popular way to use artichokes for a long time is to brew them as tea to drink, or cook some simple dishes. However, through the skillful hands of chefs, artichokes are processed into 100 unique delicious dishes such as: artichoke soup with sturgeon cartilage, artichoke chicken hotpot, Phu Quoc fish eggs with artichokes, H'Mong chicken stewed with four-season artichokes, pigeon stewed with artichokes and fresh ginseng, artichoke fried rice with five-color sturgeon rolls, artichoke mooncakes...

This is also an opportunity to honor the culinary skills of chefs from the Lam Dong Professional Kitchen Association, tourism businesses, and culinary services in Lam Dong province and the whole country.
