Unique cassava vermicelli

Driven by a passion and concern for enhancing the value of local agricultural products, Mr. Nguyen Van Hung and his colleagues have successfully researched and produced cassava vermicelli, a product with the distinctive flavor of Kinh Mon (Hai Phong).

Although working in the pharmaceutical industry, Mr. Hung has always been deeply committed to developing agricultural products in his birthplace. The former Kinh Mon town (now comprising the communes and wards of Bac An Phu, Nam An Phu, Kinh Mon, Nhi Chieu, Nguyen Dai Nang, Tran Lieu, and Pham Su Manh) was once famous for many distinctive agricultural products such as glutinous rice, onions, garlic, and cassava.

Despite the high quality of their products, farmers often face the problem of bumper harvests leading to price drops. In response to this, in 2023, Mr. Hung, along with his friend Mr. Hoang Minh Tan, established the Hac Vang Kinh Mon Agricultural Production and Trade Service Cooperative in Tran Lieu ward to support the production and sale of agricultural products for local people.

Starting with raw products, the cooperative carries out preliminary processing and manufacturing to ensure compliance with food safety standards and conditions. At the same time, they focus on investing in packaging and labeling, thus increasing the value of the products.

In a short period of time, products such as glutinous rice (Cai Hoa Vang variety), dried onions and garlic, compressed onions, dried onions, and cassava starch under the Kinh Mon Golden Crane brand have been highly appreciated by consumers and sold well.

However, Hung and Tan were still troubled by the lack of processed products made from local agricultural produce. After some research, they decided to produce cassava vermicelli. Despite thoroughly researching the production process and learning from the experience of several vermicelli production facilities and businesses in neighboring provinces and cities, the cooperative still failed when they started implementing the project.

Unlike arrowroot starch, kudzu starch has a high binding capacity, making it difficult to produce vermicelli noodles. Some people suggested adding arrowroot starch to the vermicelli to make it easier to produce, but Hung and Tan disagreed because they wanted to create a product using 100% agricultural products from their hometown.

Thanks to persistent research, innovation, and the support of food industry experts, by mid-2025, the Hac Vang Kinh Mon Agricultural Production and Trade Service Cooperative had successfully produced cassava vermicelli. Not only is it made from pure cassava starch, but the cooperative's cassava vermicelli is also special because the water used to make it comes from an underground spring in An Phu mountain.

Therefore, cassava vermicelli has a translucent, naturally sweet taste. “People are used to mung bean vermicelli, so cassava vermicelli is still unfamiliar to them. Cassava vermicelli offers many health benefits, especially during Tet (Lunar New Year) when, in addition to being a source of starch, it also has cooling and detoxifying effects. We will continue to research and improve to ensure the cassava vermicelli product reaches the highest quality. Currently, in Hai Phong city, there is only one cooperative producing this product,” Mr. Hung said.

Despite being newly tested and introduced to the market, during the Lunar New Year of the Year of the Horse, the cassava vermicelli product of the Hac Vang Kinh Mon Agricultural Production and Trade Service Cooperative was constantly sold out.

“I often order agricultural products as gifts during Tet (Lunar New Year). This year, I saw that the cooperative had a new product, cassava vermicelli, so I bought some to try. The cassava vermicelli suited my family's taste very well, so I ordered more to give to relatives. I not only chose it for its quality but also to support and appreciate the dedication of the producers to their local agricultural products,” shared Ms. Nguyen Thuy Linh from Le Thanh Nghi ward.
