The cuisine of Cao Bang, a land of mountains and rivers, is both rich and diverse, yet harmonious and refined, leaving a distinct impression on visitors.

Cao Bang is a land blessed by nature with a suitable climate and soil, thus forming areas for growing raw materials and specialty crops such as: Phia Den vermicelli (Nguyen Binh district); pears and black jelly plant (Thach An district); Mac Pup chestnuts and white jelly plant (Trung Khanh district); blood plums (Bao Lac district); Giao Co Lam tea, red Ha Thu O tea; Xom Deng plant; Phjac Chac plant, etc.

Furthermore, Cao Bang is also famous as a culinary paradise with incredibly unique dishes such as: rice rolls, sour pho, duck pho, coong phu cake, khao cake, che lam cake, seven-flavor roast duck, roast suckling pig, ap chao cake, ant egg cake, ant egg sticky rice, five-color sticky rice, black olive sticky rice, black jelly, white jelly, Xom Deng jelly, etc. These famous dishes have completely captivated the minds of tourists who want to experience the cuisine of the mountainous region of Cao Bang.

Moreover, thanks to its unique culinary culture, Cao Bang has several fruits and specialty dishes that have been honored by the Vietnam Record Organization, such as: Dong Khe pears, which were among the Top 50 most famous fruits in Vietnam in 2012; sticky rice with black olives and Coong Phu cakes, which were among the "Top 100 Vietnamese specialty dishes" in 2020-2021; Trung Khanh chestnuts, which were among the "Top 100 Vietnamese specialty gifts" in 2020-2021; steamed rice rolls and Ap Chao cakes, which were selected among the "Top 100 Vietnamese specialty dishes" in 2021-2022; and Che Lam cake and Phja Den black vermicelli, which were selected among the "Top 100 Vietnamese specialty gifts" in 2021-2022…

In addition, many Cao Bang specialties that have received OCOP 3-star certification under the One Commune One Agricultural Product program have long been renowned, such as: Bao Lac fragrant sticky rice; smoked meat; sausage; vermicelli; black jelly; Ha Lang baked cakes; Na Giang Khau Sli; A1 Black Tea; A2 Green Tea; Giao Co Lam tea; CP 999 corn wine; Khau Nang wine... and many other accolades.

Some products have achieved OCOP 3-star certification in the One Commune One Agricultural Product program.

In 2022, Cao Bang successfully organized the "Delicious Dishes of the Mountainous Region" Culinary Tourism Innovation Competition to establish a tourism brand based on cuisine, while also seeking unique and representative dishes to gradually form a culinary tourism map of Cao Bang in the future.

Following the success of the first competition in 2022, Cao Bang province decided to incorporate it into its annual tourism activities, promising to create a diverse and rich culinary experience for visitors to Cao Bang.

In line with the breakthrough objectives for sustainable tourism and service development in 2023, the province continues to implement training and skill development programs in cooking at community tourism destinations to improve the quality of human resources and provide tourists with the best culinary experiences in the mountainous region.

With the involvement of all levels of government, businesses, and the people, Cao Bang's culinary tourism in particular, and Cao Bang tourism in general, will build a unique brand and impression for tourists in the future.
