Flavor
Recently, on her TikTok Vlog channel "Super Spicy Home Cooking," Bui Thi Thuy Duyen (from My Thuong ward), a young woman in her 20s, posted a video of herself preparing a delicious whale fish soup with pineapple. The image of the soup, with its golden-brown whale fish, bright red chili peppers, vibrant yellow pineapple, and green onions and cilantro, delighted many viewers. In the comments section, many users expressed their delight at finding this seasonal dish, so typical of Hue cuisine.
Growing up surrounded by meals prepared by her grandmother and mother left Duyen with many vivid memories of the authentic flavors of Hue. “Everyone in my family loves spicy food, so our dishes are usually rich in flavor with shrimp paste, fish sauce, and lots of chili peppers. When I started the channel, I simply wanted to share the dishes my family eats with everyone,” Duyen recounted.
From her small family kitchen, over the past two years, the young woman has uploaded more than 200 cooking videos. Many of these videos have garnered millions of views and thousands of shares on TikTok and Facebook.
Sharing a common desire to showcase family meals, Hoai Thuong (from Phu Vinh commune), the owner of the "Thuong's Home-Cooked Meals" channel, initially filmed home-cooked meals as a way to preserve memories. Later, realizing that many people enjoyed the rustic dishes of Hue and wanted to learn more about the ingredients and preparation methods, she began sharing familiar dishes from everyday life.
Ms. Thuong shared: “I've noticed that, besides the seasoning, the delicious taste and aroma of hometown dishes also come from fresh, locally sourced ingredients like green chilies, chili powder, chili sauce, shrimp paste, or pickled gourds… For me, it is these seemingly simple ingredients that contribute to the rich, flavorful, and unforgettable taste of home-cooked meals.”
What viewers love about videos of home-cooked meals from Hue is not only the ingredients but also the preparation and seasoning methods that are distinctly local. Therefore, even though most videos don't have elaborate dialogue, just the sounds of cooking and the distinct Hue accent, they still create a feeling of closeness and authenticity.
Attraction
Ms. Tran Thi Ha, originally from Hue but now living in Alberta, Canada, said she saw a TikTok channel featuring young people from Hue and was quickly captivated. "Looking at those colorful and flavorful dishes made me miss Hue so much," Ms. Ha shared.
Besides helping those far from home ease their homesickness, home-cooked meal vlogs have also become a simple cookbook for those who love Hue cuisine .
Having been very impressed with braised mackerel while traveling in Hue but not knowing how to prepare it properly, Ms. Bao Ngoc, currently living in Ho Chi Minh City, found the right recipe through a video from the vlog "Super Spicy Home Cooking".
She recounted, "After watching the video, I bought some more green chilies to try making braised mackerel for the whole family. Thanks to the channel owner's tips, I was able to braise a pot of mackerel that was both savory and spicy, making it very appetizing with rice. My husband and children both loved it."
Besides the "Super Spicy Home Cooking" vlog or "Thuong's Home Cooking," many other young people are also contributing to spreading the tradition of Hue's home-cooked meals through social media platforms, such as the "Thao's Family in Hue" channel, "Trinh in Hue," and "Vu in Hue." With their simple and authentic local content, these channels have been and continue to attract a large following.
With the development of technology, young people in Hue are contributing to bringing the everyday yet incredibly appealing dishes of Hue cuisine to a wider audience.
