Giao Thuy's rolled spring rolls are a renowned specialty, preserved and passed down through many generations. According to historical records, when Thien Truong Prefecture became the second capital of the Tran Dynasty, many traditional craft villages were established, and exquisite products from all over converged here to offer to the King. Among them, the simple rolled spring rolls of the people of Giao Thuy were offered to the King, and since then have become a familiar and beloved dish among the local people and famous throughout the Northern Delta region.

What makes Giao Thuy's spring rolls so special is the meticulous and refined selection of ingredients and preparation. The main ingredients are pork and pork skin, with the skin carefully selected from healthy pigs, usually from the head, not too thick and with little fat to prevent it from being greasy or mushy. After being thoroughly boiled and cleaned, the skin is skillfully sliced ​​thinly by hand. The pork is also carefully selected, taken directly from the slaughterhouse while still hot, without being chilled to preserve its tenderness and natural sweetness.

An indispensable ingredient that contributes to the distinctive flavor of nem nắm (pork roll) is roasted rice powder – made from fragrant tám thơm rice from Hải Hậu. The rice is soaked overnight, drained, then roasted until golden brown, and then finely ground into a fragrant powder. This powder is mixed thoroughly with the meat and pork skin, then tightly formed into individual nem rolls, wrapped in fig leaves and banana leaves, creating a simple yet appealing shape.
