According to Ms. Tam, to make the Ngoc Hien brand of rice vermicelli with crab, the main ingredients include rice mixed with a little sticky rice, soaked overnight, then ground into flour. When making the vermicelli, add a little tapioca starch, coconut milk, filtered water and a little seasoning, pepper, onion, chili... The flour for the vermicelli must be kneaded until dry, then put in a basin, kneaded by hand until soft. Before cooking, people shape the dough around a bottle, use a knife to cut it into large strands, put it in a pot of boiling soup and wait until it is cooked before using.

The soup for crab noodle soup is usually made from water mixed with coconut milk, adding crab meat and roe for richness. The spices used vary depending on the noodle soup and the taste of the user. The young crab is boiled, cooled, then the thin shell on top is gently peeled off, leaving the soft skin covering the meat and roe intact.
