Mr. Le Thanh Tai, chef at Can Tho Eco Resort (Phong Dien district), said: “In Phong Dien, there are many delicious dishes made from fruits such as mangosteen chicken salad, strawberry chicken salad, chicken stewed with strawberry... Therefore, we took advantage of the fruit garden and available ingredients in the resort to form the idea of ​​making rambutan chicken salad. This is a familiar and refreshing dish in the summer.”

Accordingly, to make this salad, the rambutan must be golden yellow, just ripe, ensuring the right amount of crunchiness and sweetness. When picked from the garden, the rambutan will be processed to take the white flesh inside, mixed with a little sugar and soaked in ice to keep it fresh and crunchy. The chicken used for the salad is garden chicken, ensuring the toughness, aroma and sweetness of the meat. The mixed vegetables are cucumber, shredded carrots, finely chopped onions, shredded chili with perilla, Vietnamese coriander, fried onions and roasted peanuts. All the ingredients are pre-processed and mixed well with sweet and sour fish sauce. Chef Le Thanh Tai said: "To ensure the crunchiness and deliciousness of the dish, mix the ingredients well for 5 minutes. Rambutan chicken salad is a suitable appetizer for summer days, very popular with diners".

Tourist Tran Thi My Huyen said: “Rambutan is a very familiar fruit and I did not think that combining chicken with rambutan could create such an interesting dish. Rambutan chicken salad has enough sweet, salty, sour, vegetarian flavors... it is a delicious dish, you can eat it forever without getting bored”. It can be seen that dishes in Can Tho have many creative ideas based on local ingredients, each season has its own dishes. Mr. Lam Minh, General Manager of Can Tho Eco Resort, said: “We want to bring visitors authentic local culinary experiences. Especially at Phong Dien, the dishes are all creative when combined with local fruits.
