When in Can Tho, try the chicken salad with rambutan.

From around May, Can Tho enters rambutan season. This is the perfect time for tourists to visit orchards, pick ripe, red fruits, and enjoy the sweet taste of seasonal produce. In particular, Can Tho boasts many delicious dishes made from rambutan, such as rambutan chicken salad.

Chef Le Thanh Tai at Can Tho Eco Resort (Phong Dien district) said: “In Phong Dien, there are already many delicious dishes made from fruit such as chicken salad with mangosteen, chicken salad with rambutan, chicken stew with rambutan… Therefore, we took advantage of the fruit orchards and readily available ingredients in the resort to create the rambutan chicken salad. This is a familiar yet refreshing dish for summer.”

Accordingly, to make this salad, the rambutan must be yellowish, just ripe, ensuring a crisp texture and a balanced sweet and sour taste. After being harvested from the garden, the white flesh inside is processed, mixed with a little sugar, and soaked in ice water to maintain its freshness and crispness. The chicken used is free-range chicken, ensuring a tender, fragrant, and sweet meat. The mixed vegetables include cucumber, shredded carrots, finely grated onions, shredded chili peppers, along with mint, coriander, fried shallots, and roasted peanuts. All ingredients are prepared and mixed thoroughly with a sweet and sour fish sauce dressing. Chef Le Thanh Tai said: “To ensure the crispness and perfect taste of this delicious dish, mix all the ingredients thoroughly for 5 minutes. Rambutan and chicken salad is a suitable appetizer for summer days and is very popular with diners.”

Tourist Tran Thi My Huyen said: “Rambutan is a very familiar fruit, and I didn't think that combining chicken with rambutan could create such an interesting dish. Rambutan chicken salad has a perfect balance of sweet, salty, sour, and vegetarian flavors… it's a delicious dish that you can eat again and again without getting tired of it.” It's clear that Can Tho's cuisine is highly creative, based on local ingredients and seasonal produce. Mr. Lam Minh, General Manager of Can Tho Eco Resort, said: “We want to bring tourists authentic local culinary experiences. Especially in Phong Dien, the dishes are creatively combined with local fruits. Depending on the season, we have unique dishes such as rambutan chicken salad, durian pork skin cake…; aiming to provide tourists with diverse and memorable experiences of Can Tho.”
