The owner of this restaurant is Mrs. Nam, the "father" of the shrimp pancake dish.
Ms. Ly Thi Thu, the originator of Binh Dinh's famous shrimp pancake (Banh Xeo Tom Nhay).
Mrs. Nam, whose real name is Ly Thi Thu, is 87 years old. In her youth, she married and had a son. Her husband died in the war, and without a job, she chose to make Vietnamese pancakes (banh xeo) to earn a living.
"Banh xeo (Vietnamese savory pancake) is sold everywhere. So, for a newly opened restaurant, we have to make delicious banh xeo to attract customers. That's why I thought of making banh xeo with live prawns and flour made from the best quality rice. As for the accompanying fresh vegetables, we have unripe mango, thinly sliced cucumber, and lettuce and herbs that are as fresh as if they were just picked from the garden," Mrs. Nam recalled.
The specialty dish is the jumping shrimp pancake from Mrs. Nam My Cang.
The restaurant is just a small, one-story house in the countryside, but it's always crowded. Customers know Mrs. Nam's restaurant not only for its quality but also for its unique feature: the prawns are still alive and jumping on the pancake batter. That's why people call Mrs. Nam's restaurant the "jumping prawn pancake restaurant."
Making My Cang shrimp pancake
For over 40 years, the restaurant has maintained an unwavering rule: customers, whether close friends or VIPs, must queue to eat. Mrs. Nam shared that the restaurant's guiding principle is to use only live prawns for the pancakes. Therefore, on days when she can only get a small quantity of live prawns, she has to close early rather than use other types of prawns for the pancakes.
