The Michelin Guide has officially announced the list of restaurants awarded the Bib Gourmand prize in Da Nang for 2024. Among them, Co Ba's shrimp pancake restaurant is one of the most popular eateries, praised for its delicious taste and affordable prices.
Located on Trung Nu Vuong Street in Hai Chau District, this banh xeo (Vietnamese savory pancake) restaurant has been open for over 10 years.
According to Michelin's description, the Vietnamese savory pancake (banh xeo) here impresses with its texture and the accompanying dipping sauce: "The crust is light, thin, and crispy, with the authentic flavor of Binh Dinh, topped with fresh shrimp, and dipped in a bowl of spicy and sour fish sauce, creating an explosion of flavor."
The signature ingredient that makes the banh xeo (Vietnamese savory pancake) at this restaurant so special is the fresh prawns. The prawns selected for the filling must always be alive, still wriggling when placed in the pan. When eaten, diners will experience the fresh, firm, and slightly sweet prawn meat, unlike the mushy texture of frozen prawns. In addition, the generous filling also includes bean sprouts, pork, and green onions.
The banh xeo (Vietnamese savory pancake) at this restaurant has been slightly modified to suit the taste of Da Nang residents, but it still retains the distinctive characteristics of its culinary origins in Binh Dinh province. The flavor and quality can satisfy even the most discerning diners.
