When experiencing these dishes, diners will enter a culinary world of the sweet taste of avocado, the subtle aroma of herbs blended with cordyceps, or the unforgettable slightly bitter taste of tortoise shell jelly.
The highlight of this menu is the combination of ingredients, exemplified by the Cordyceps Chicken Soup. Cordyceps has a rich, nutty flavor that becomes more fragrant the more you chew it. However, incorporating cordyceps into a meal isn't easy, so chefs must be careful when cooking to preserve its nutrients while maintaining its delicious flavor and harmony with the other ingredients. Chef Tran Ty Ich shared that the secret to preserving its nutrients and delicious flavor is to add it last, after the other ingredients are cooked.

Chicken and Cordyceps Soup
In Cordyceps Chicken Soup, all the herbal ingredients such as yam, goji berries, codonopsis pilosula, red dates, pears, etc., are used to nourish health. After preparation, the chicken is steamed with these ingredients in a Japanese pumpkin for about 30 minutes, and finally, cordyceps is added. The resulting broth should be clear and light, and the Japanese pumpkin should be cooked just right, not too soft. Cordyceps chicken soup is highly nutritious, containing a full range of compounds such as protein, vitamins, iron, zinc, etc., but it does not cause weight gain or make diners feel heavy after eating.
One of the most distinctive dishes of the Mekong Delta is Bun Suong (brown rice noodle soup with prawns), originating from Tra Vinh , a place where cultures intersect and famous for its unique cuisine. Bun Suong is also known as Bun Duong, because the prawn noodles resemble the shape and pale yellow color of a coconut beetle larva. Some say Bun Suong carries an interesting folk meaning: eating it brings good luck and success in all endeavors. Whatever the meaning, this is certainly a favorite dish of Chef Tran Ty Ich in this tropical menu.
The preparation of brown rice noodle soup with prawns is quite simple. First, fresh prawns are pounded until firm, prawns are washed and boiled until cooked, and dried brown rice noodles are boiled until cooked. Then, tamarind and herbs are added. However, making a delicious bowl of noodle soup is not easy; the broth must be simmered thoroughly from bones, the prawns must be fresh, and the brown rice noodles must be cooked to the perfect consistency, ensuring they remain chewy. All the fresh flavors blend together, providing diners with an unforgettable experience.

Brown rice vermicelli with prawns
The rainy season brings an explosion of flavors from fresh, locally sourced ingredients, from juicy tomatoes to vibrant green lettuce. Diners can't miss the Avocado Spring Rolls or Fruit Salad, showcasing the lively essence of the tropics. The Avocado Spring Rolls consist of rice paper wrappers filled with lettuce, vegetables, vermicelli, meat, shrimp, chives, and sliced avocado, served with a dipping sauce. They are delicious, easy to make, and provide essential nutrients. The Fruit Salad features lettuce cut into bite-sized pieces, peeled and deseeded cucumber slices, thinly sliced bell peppers, sliced tomatoes, and thinly sliced onions. The chef then arranges all the ingredients on a plate, served with cooked chicken and brown rice.
These two dishes strike a unique balance between deliciousness and healthiness, a characteristic found only in Vietnamese cuisine . The sweet flavors of tropical fruits, along with the eye-catching colors and the rich, cool, and creamy roasted sesame sauce, make the journey of discovering nature's bountiful harvest even more enjoyable!
It would be a mistake to focus only on the main courses and forget to enjoy the final dessert, which is Avocado Guiling Jelly. This is a chef's creation, combining the refreshing coolness of avocado with the slightly bitter taste of Guiling. Guiling is considered a medicinal food that helps to cool the body and detoxify. The avocado is chopped and blended with whipping cream and fresh milk, then cooked over medium heat. The gelatin is added and dissolved, then poured into molds and chilled until thickened before being served with Guiling Jelly. Enjoying this avocado Guiling Jelly with coconut milk and fresh milk allows you to experience two things at once: a delicious meal and a detoxifying effect, boosting your energy and enthusiasm for the day's activities.
