From Hanoi's 36 streets and wards to a Hanoi with expanded administrative boundaries, with the intermingling and crystallization of the culture of the Doai region and many other areas, Hanoi's cuisine has become rich, diverse, both refined and standardized, yet full of creativity.

Hundreds of intangible cultural heritage items in the culinary field have been identified and included in the City's Inventory. Among them, 7 items have been inscribed on the National List of Intangible Cultural Heritage: Hanoi Pho, Me Tri rice flake making, Quang An lotus tea infusion, Phu Thuong sticky rice making, Thanh Tri rice roll making, and Bat Trang traditional feast cooking knowledge.
At the opening ceremony, the organizing committee announced the decision to inscribe "Knowledge of processing and enjoying La Vong fish cakes" into the National List of Intangible Cultural Heritage.

The creators of this heritage are the Doan family at 14 Hang Son Street (now 14 Cha Ca Street, Hoan Kiem Ward), who have maintained and preserved the traditional fish cake recipe for six generations, playing a central role in protecting and maintaining the original value of the dish. The Hanoi Culinary Culture Festival 2025 not only provides a creative cultural space to celebrate the culinary essence of Hanoi, but also serves as a platform for culinary artisans to tell their stories and connect with the younger generation.
The festival features a variety of activities with 60 spaces showcasing Hanoi cuisine and regional culinary products, allowing visitors and residents of the capital to enjoy many delicious and unique dishes from Hanoi and other localities, honoring the value of traditional culinary heritage, and affirming the brand "Hanoi Cuisine" associated with elegant and refined identity.

Besides the exhibition space showcasing culture and cuisine, the festival also features a thematic seminar on "Exchange to improve the quality of human resources - developing culinary culture". Within the framework of the festival, there are also many demonstrations by artisans, quick cooking competitions among students from various schools, and more.

At the festival, locals and tourists can also enjoy artistic performances such as: circus, folk singing, street performances, and art combining traditional and modern styles; a photo exhibition with 40-50 works promoting Vietnamese culture, tourism , and cuisine; a mobile book exhibition introducing 200 books on culture, art, tourism, and cuisine; and demonstrations of culinary heritage such as: making banh chung (traditional Vietnamese rice cakes), cooking Bat Trang pottery, infusing Tay Ho lotus tea, the process of making com (roasted rice flakes), cooking Phu Thuong sticky rice, cold snail noodle soup, instructions on making candied fruits and jams, and cooking cheo se (a type of porridge)...

The Hanoi Food and Culture Festival 2025, with its many new features, is expected to become a culturally rich weekend destination. Creative networking activities will contribute to increasing the attractiveness of the heritage, making cuisine a driving force for the development of the capital's cultural industry. The festival runs until December 21st.
