For the people of Dong Se village, Nhuan Trach commune (formerly), now Luong Son commune, the kudzu plant is like a gift from nature. In the past, the Muong people here usually only planted it in a corner of their garden, and when it was time to harvest, they would cut it into pieces to boil or grate the tubers to make kudzu flour for family use. For about ten years now, kudzu cultivation has expanded to the lush green hillsides, carefully nurturing the essence of the soil, sun, and wind of the Muong region to produce long, slender tubers, thus creating a pure, pristine white flour that meets OCOP 3-star standards.

Driven by the ambition to develop a distinctive product bearing the brand of their hometown and solve the problem of market access for local people as they increase acreage and production, in 2022, Mr. Hoang Trong Thu and eight other members who are the main cassava growers in the village jointly established the Nhuan Trach Agricultural Service and Starch Processing Cooperative.

Since cassava starch is a product consumed directly by consumers, the production process must ensure absolute safety, preserving all the nutrients and health benefits, while also maintaining its distinctive delicious flavor.

With that philosophy in mind, to create high-quality cassava starch, Mr. Thu and the cooperative members first established an 8-hectare raw material area cultivated using organic methods. The cooperative invested in a continuous grinding and drying system, building a closed production process. All stages, from selecting tubers, washing, grinding, filtering, settling, drying to packaging, are carried out meticulously, meeting food safety standards.

Ms. Nguyen Thi Vinh, a member of the cooperative, said: "The raw materials are carefully selected from fresh, high-quality cassava roots, then washed, ground into a paste, filtered, and left to settle for a week to remove sap and impurities. Next, the starch is placed on trays, dehumidified, and dried in a dryer for 48 hours at 65°C. After drying, it breaks into pieces without crumbling like other types of flour. Approximately 6 kg of fresh cassava root yields 1 kg of dried cassava starch."

Thanks to the application of advanced machinery and adherence to safe production processes, Nhuận Trạch cassava starch has a pure white color, large granules, a dry and crispy texture, and a distinctive aroma. The product can be mixed with water for direct consumption, used to infuse pomelo blossoms, or used in baking, soups, and desserts. When cooked, the starch is opaque white, chewy, fragrant, smooth, and refreshing, melting on the tongue when enjoyed. With its cooling properties and rich nutrients, in addition to its ability to cool the body, cassava starch is also known for its use in beauty treatments and the treatment of certain ailments.

Muong-style cassava flour has won over consumers thanks to its delicious flavor, high nutritional value, and safe, transparent origin. This is a factor that consumers are increasingly concerned about, especially given the recent discovery of counterfeit functional foods by authorities.

Combining tradition with modernity, in 2023, Nhuận Trạch cassava starch product was recognized as a 3-star OCOP product. In 2024, it was recognized by the Provincial People's Committee as a typical rural industrial product.

Annually, the cooperative harvests and purchases approximately 300 tons of fresh kudzu root at a price of around 15,000 VND/kg, contributing to stabilizing the output for farmers in the region. From this, the cooperative produces 5-6 tons of kudzu starch, supplying the market inside and outside the province at a price of about 200,000 VND/kg; if packaged in attractive boxes for gifts, the price ranges from 250,000 to 300,000 VND/kg.

The cooperative is gradually improving its product designs and perfecting its production processes; at the same time, it is expanding its distribution channels and strengthening product promotion on e-commerce platforms, social media, and trade fairs. Recently, the cooperative's cassava flour product was selected by Phu Tho province to participate in the first Autumn Fair - 2025 at the National Exhibition Center ( Hanoi ), contributing to promoting the distinctive agricultural products of the ancestral land.

Mr. Hoang Trong Thu shared: “We hope that each package of cassava starch from our cooperative is not only a consumer product, but also the culmination of the hard work and pride of the Muong people here. Preserving the craft, ensuring quality, and expanding the market are the ways to spread the value of our homeland's cassava plant.”

Sourced from authentic, high-quality raw materials, Nhuận Trạch cassava starch is both a gift for health and a testament to the creativity and acumen in linking rural economic development and the aspiration to build a brand for agricultural products from the Mường region.
