Although duck meat is a familiar ingredient in Vietnamese culinary culture, many housewives still hesitate because this food has a characteristic foul smell.
The reason comes from the fact that ducks' oil glands are quite developed and because they often swim underwater, they have a somewhat unpleasant smell.
Below are some simple ways to clean duck meat to easily remove odors, make the dish more attractive, and satisfy the taste of the members.
Proper plucking: According to folk experience, proper plucking is an important factor in reducing the duck's odor.
The method is to boil a pot of water, add a little lime or star fruit leaves, then dip the duck with its blood cut into the water, then quickly rub out all the feathers and down. If you see black liquid in the duck's pores, squeeze it all out and wash it clean.
Use natural ingredients: To remove the duck's odor, you can use some familiar ingredients and spices such as salt, lemon or vinegar, wine and crushed ginger, rub all over the surface of the duck (after cleaning the feathers) both inside and outside, especially hidden areas such as the wings and thighs.
Wait about 15-20 minutes for the smell to reduce, then wash the duck with clean water several times. This method can help remove up to 80% of the duck's smell.

Remove the gonads: Considered the main "culprit" causing unpleasant odors in poultry such as chickens, geese, and ducks, their gonads should be removed during the preparation process. This is also the part that concentrates lymphatic fluid, which can contain viruses, pathogenic bacteria, etc.
Therefore, removing the buoy not only helps reduce unpleasant odors but also ensures safety.

Boil duck properly: While chicken is usually boiled immediately with cold water because its skin is soft, thin, and easily torn, duck and goose are boiled when the water is boiling. Crushed ginger, a little fish sauce or salt are also added to the duck broth to make the meat more fragrant and flavorful.
When the water boils again, reduce the heat to simmer, adjusting the boiling time depending on the weight of each fish.
You can check if the duck is cooked by sticking a chopstick into the duck meat. If no red liquid comes out, it is cooked. If you buy an old duck with tough meat, do not take it out immediately after turning off the stove, but leave it in the pot to simmer until it cools.
