The main ingredient for this dish is free-range chicken, preferably black chicken, a specialty of the high mountain regions known for its fragrant, firm meat and high nutritional content. The soup is supplemented with rare and precious natural medicinal herbs such as Angelica sinensis – the main ingredient, with its delicate aroma and sweet taste, providing blood-tonifying and immune-boosting effects; red dates, offering natural sweetness, calming the nerves, and nourishing the blood; Cordyceps sinensis – a valuable medicinal herb that supports immune system enhancement and improves overall health; and goji berries, with their eye-catching orange-red color, not only enhancing flavor but also improving eyesight and nourishing the liver and kidneys… along with several other medicinal herbs. To achieve the perfect flavor, the chicken is thoroughly cleaned and marinated with Angelica sinensis and a little white wine to remove any fishy smell and enhance the characteristic aroma of the herbs. Then, the chicken is simmered with the other ingredients in the following proportions: Angelica sinensis makes up 5 parts to serve as the main ingredient, while red dates and Cordyceps sinensis each make up about 2-3 parts, just enough to add a natural sweetness and boost nutrition. Throughout the simmering process, the aroma of the chicken and herbs spreads, awakening the diner's taste buds. The subtle scent of Angelica sinensis combined with the sweet and savory taste of red dates and Cordyceps sinensis creates a unique symphony of flavors, both familiar and novel.
