According to Dr. Gonzalez, rare sugars, which occur naturally in certain fruits, are increasingly attracting attention from the restaurant, hotel, and food industries as an alternative to traditional sweeteners.
The breakthrough by Australian researchers is expected to pave the way for the widespread application of healthier sweeteners in the food and beverage industry. However, production costs remain a barrier to widespread commercialization.
