Unlike the pungent fishy smell of fresh seafood markets, long-time residents of coastal villages and tourists strolling through the stalls will easily encounter the alluring aroma of seafood being prepared. Different cooking methods produce a variety of distinct scents. Perhaps the most stimulating to the sense of smell is the aroma of grilled seafood. The smell of grilled shrimp is truly fragrant. Grilled mackerel is appealing to many, with its rich flavor spreading around the glowing charcoal grill. The smell of grilled scallops with onions and butter is rich and savory… Dried seafood also has a very strong aroma when grilled: grilled dried squid is fragrant, one house grilling it, five or seven houses around can smell the enticing aroma; grilled dried anchovies have an irresistible aroma, making you want to eat them with a bowl of hot rice and a little delicious fish sauce.

The aroma stimulates the sense of smell, enticing people to come and enjoy both the fragrance and taste of the dish. Fresh seafood, when prepared correctly, is excellent. There's the scad fish salad with its tender white fish meat, blended with the banana fish sauce prepared in the style of Phan Thiet; the savory fish cake noodle soup with the rich flavor of fresh fish; the sweet and sour fish hotpot easily stimulates the appetite… Fried seafood has its own unique richness and deliciousness. Fish marinated in paper and fried is very flavorful, fried mackerel is very tender, and fried sardines are crispy thanks to their scales. Braised fish is also very appealing, with its savory taste, sweet meat, and varying levels of spiciness depending on the type: scad, tuna, mackerel, silverfish…

With various preparation methods, seafood from the old Binh Thuan coastal region, now part of southeastern Lam Dong , offers different flavors and levels of saltiness. Dishes on restaurant menus have their own distinct flavors. However, simple dishes prepared by many families in coastal villages still possess a unique appeal and savory taste. A bowl of hot rice topped with delicious fish sauce and spicy chili peppers remains a tempting treat. Hot rice served with braised mackerel with garlic and chili, or braised tuna head with a savory sauce, braised tuna with vermicelli, or steamed squid with ginger dipped in delicious fish sauce – who wouldn't find that appetizing!

Perhaps the coastal village where he lives possesses a very distinctive character. Thinking about his birthplace when he's far away, and seeking a taste of home when he returns, he most easily recognizes it when he encounters the simple, rustic dishes. These products, for generations, have nourished countless people in the coastal village, including him. He was raised by his mother on the produce of his hometown. And remembering his homeland and roots, he will never forget the rich, savory taste of the sea in each simple dish of his hometown.
