Rich with Dien Phuong snails

Located at 31 Su Van Hanh (Hoa Hai ward, Ngu Hanh Son district), the restaurant “Hanh Dien Phuong snail soup” has become a familiar destination for rustic cuisine lovers. Without a flashy sign or elaborate decoration, the restaurant still attracts customers with the fragrant smell of hot snail pots and the spicy taste spreading on the tip of the tongue.

According to the owner, the restaurant is called “Snail Suction Hanh Dien Phuong” because the family has a relative who is a son of Dien Phuong (Dien Ban town, Quang Nam province) who has a tradition of selling this dish. From the memories of the homeland’s cuisine , the small snail restaurant was born with a rustic way of cooking, not sophisticated but enough to awaken the taste buds of anyone who has ever tasted it.

The snails here are always kept hot on a red stove to preserve the natural sweetness and crispiness of each snail. Compared to other familiar snail dishes, what makes the "soul" of this dish is the layer of golden fried onions, fragrant, crispy, and fragrant, hand-made every day from crushed purple onions, fried over medium heat. The fatty onions blend with the layer of bright red chili powder sprinkled evenly on the surface of the snails, making the dish more eye-catching and creating an attractive, slightly spicy taste. Diners can squeeze in 1-2 more limes and adjust the spiciness according to their taste to create their own "version" of snails.

The way to eat snails here is still in the rustic style, just gently hold the tail, put your mouth up to suck in a breath and the round, crispy meat will flow into the tip of your tongue along with the broth. The sweet taste of lemongrass, the slight spiciness of chili, the strong aroma of fried onions mixed in the rich, shimmering broth will make diners exclaim. Many diners also order grilled rice paper to dip in the snail broth, creating a combination that is both strange and satisfying the craving for delicious dishes with the rich flavors of Central Vietnam.

Currently, each portion of snails at the restaurant costs from 45,000 VND/portion. In addition, the restaurant also serves snails with ginger fish sauce. With large, firm snails, boiled just enough to keep their toughness, and ginger fish sauce mixed in the right proportion, this is also a dish ordered with snails. Snails are sold for 50,000 VND/portion. The restaurant opens from 1 pm every day and is crowded from 3-4 pm.
