The craft of making fish sauce may seem simple, but it is the culmination of time, nature, and above all, the love of the craft of people who place their complete faith in the true value of a drop of pure fish sauce.
Passed down to the third generation, Mr. Hua Minh Nhut, owner of Nam Nhut Fish Sauce Factory (Ngoc Tuan Hamlet, Cai Nuoc Town, Cai Nuoc District), strives to preserve his family's traditional craft. For the past 30 years, Nam Nhut fish sauce has become familiar to local consumers, thanks to its rich flavor and traditional fermentation method.
Next to his small house, Mr. Hua Minh Nhut has set aside a fairly large yard to place more than 150 jars for fermenting fish sauce.
“My father traveled extensively in the central provinces and learned how to make fish sauce there. Later, he returned to live here and passed the trade down to me. This profession has supported my family for decades. We make fish sauce the same way our ancestors ate it, and I try to pass the trade on to my children so it doesn't disappear,” Mr. Nhựt confided.
Each large earthenware pot will yield 30 liters of concentrated fish sauce (the most potent type), priced from 20,000 to 100,000 VND per liter.
Made from fresh, high-quality sea fish, the fish sauce is fermented with salt using traditional methods, completely free of additives. Through months of sun drying and meticulous filtration, each drop of rich, clear fish sauce is produced, carrying the salty taste of the sea and the enduring labor of humankind.
Beyond simply preserving the craft, fish sauce producers in the province are actively participating in the OCOP program, standardizing production processes, improving packaging, and investing in machinery to bring their products closer to a wider market. These efforts not only contribute to increasing economic value but also create more jobs for workers and preserve the craft, which is closely linked to the local identity.
Fish sauce produced using a family secret recipe is how Mrs. Tran Cam Thy (Khanh Hai commune, Tran Van Thoi district) has preserved and developed the Hue Bung fish sauce brand for over 50 years.
In addition to striving to preserve traditional crafts, Ngoc Tran fish sauce production facility is constantly improving its packaging and designs to reach a larger market.
Ngoc Tran fish sauce is one of the typical OCOP products of Cai Doi Vam coastal town, Phu Tan district.
