During Tet (Vietnamese New Year), in addition to familiar traditional dishes, a hot bowl of vegetarian Quang noodles is not only an offering to ancestors but also brings purity and lightness to the body after days of enjoying many dishes made with fish, meat, and oil.

Vegetarian Quang noodles are available in many places, but the Quang noodles from Quang Nam - Da Nang have a very unique flavor, rich yet refined.

From famous vegetable-growing villages like Tra Que, Bau Tron, Tuy Loan, La Huong..., to distinctive ingredients such as pure peanut oil, Dai Loc and Tuy Loan grilled rice paper; fragrant shallots... all have created the soul of Quang noodles, whether savory or vegetarian, each with an unforgettable rich flavor.

Unlike Hanoi pho or Hue vermicelli, Quang noodles have a distinct character thanks to their rich, flavorful broth—not too much, but full of taste.

Simple vegetarian Quang noodles

Cooking vegetarian Quang noodles isn't overly complicated, but it requires meticulous attention to detail in each step. Ingredients like tofu, bean curd sheets, straw mushrooms, carrots, taro, etc., are carefully prepared and seasoned to perfection.

The leeks are sautéed in gac oil until fragrant, then the other ingredients are added and stir-fried until well-seasoned. Finally, just enough broth is added to create a naturally sweet and savory flavor.
