Solanine is not significantly soluble in water, so stir-frying, boiling and other methods cannot destroy this substance. The correct way is to soak eggplant with a little vinegar or salt before processing or use lemon and should be eaten with a variety of other dishes to reduce the activity of these substances.

The best way to prevent solanine poisoning is to control your intake. Eating about 250 grams of eggplant per meal will not cause any discomfort, so you do not need to worry too much.

Eating raw eggplant is a mistake. Because raw eggplant contains the poison solanine, once this substance enters the human body, it will anesthetize the respiratory center. If you eat a large amount of raw eggplant, the more solanine it contains, the more severe the poisoning symptoms will be.
