Eggplant contains a substance called solanine, which has antioxidant and cancer-inhibiting effects. However, eggplant also has a strong stimulating effect on the respiratory centers and can have anesthetic properties, so it can cause poisoning if consumed in excessive amounts.

Solanine is not significantly soluble in water, so stir-frying, boiling, and other cooking methods cannot destroy it. The proper way to use it is to soak eggplant in a little vinegar or salt before cooking, or to add lemon juice, and to eat it with a variety of other dishes to reduce the activity of this substance.

The best way to prevent solanine poisoning is to control your intake. Eating about 250 grams of eggplant per meal won't cause any discomfort, so there's no need to worry too much.

Eating raw eggplant is a mistake. Raw eggplant contains the toxin solanine, which, once ingested, paralyzes the respiratory center. The more raw eggplant you eat, the higher the solanine content, and the more severe the poisoning symptoms will be.
