For people from the sea like me, jumping snails are not only a delicious, crave-worthy dish but also a sky full of memories. When I was a kid, boiled jumping snails with ginger fish sauce was a "luxurious" gift that parents only gave their children on the most special occasions.

There were a lot of jumping snails at that time. A kilo of jumping snails at that time was only about 30. Each jumping snail was plump and long, about the length of a finger. When boiled or steamed, the snail meat was pulled out, dipped in ginger fish sauce, and then slowly chewed, enjoying the special sweetness. Needless to say, it was an extremely memorable feeling. After eating, people saved the snail shells, many people used them to coat the yard, in case of rain and wind, to prevent the yard from being muddy and slippery.

The reason why the jumping snail has delicious meat is because this type of snail has a characteristic that is very different from many other types of snails. The jumping snail lives in the warm seabed, and it does not crawl like normal snails, the jumping snail or "jumps" to move. Because of this characteristic, the meat and muscles of the jumping snail are very firm.

Jumping snails can be processed into many dishes, such as stir-fried jumping snails with butter, steamed jumping snails with lemongrass, stir-fried jumping snails with lemongrass and chili, grilled jumping snails with pepper... However, in my opinion, jumping snails are best when grilled. Hold the snail and put it on hot coals, when the aroma of snail meat spreads, just take it and enjoy.

Another characteristic of jumping snails is that when cooked, especially when grilled, the meat will give off a very distinctive, mild aroma. Therefore, if jumping snails are "marinated" with other spices, when enjoying them, we can only taste the snail's flavor but not its aroma.

Holding a hot jumping snail just taken out from the grill. Pulling out the ivory white, thick flesh, the aroma of the cooked snail is overwhelming. Dip this flesh into the sweet and sour fish sauce... The more you chew, the more the sweet taste urges the diner to quickly pick up the snail that has just been grilled to perfection.
