Back when our family was poor, we often lacked even the most basic meals, let alone snacks or treats. Therefore, making fried banana fritters became a momentous occasion in the eyes of the children.

My grandmother packed up everything she had in the house, including sawdust for the stove, several bunches of ripe yellow bananas, mature coconuts, sugar, glutinous rice flour, and sweet potatoes.

Then, she set about preparing a feast of nearly a hundred fried banana cakes, dividing them equally among her children, grandchildren, and neighbors. As she worked, she said, "The rainy season only comes once a year, and the fried banana cakes are just as good, so don't ask for too much!" We helped her, laughing with delight and feeling overjoyed.

Now, it's hard to find that old wood-fired stove, but I still try to adjust the gas flame to a very low setting to make frying the cakes easier. I also searched all over the market to find a bunch of plantain bananas, a piece of old coconut, and a kilogram of sweet potatoes.

Once the ingredients are prepared and mixed, the thinly sliced ​​coconut and sweet potato pieces are just in time to be incorporated into the batter. Heat a pan of oil until very hot, then drop spoonfuls of batter and ingredients into the pan and fry until crispy.

Once the pancakes are cooked, remove them from the pan, let them drain, and sprinkle with sesame seeds for garnish. Finally, enjoy! With the first bite, you'll immediately feel the crispness of the pancake, the sweet softness of the banana, and the rich, creamy flavor of the coconut.

Watching my children devour the golden, crispy fried banana fritters in our small kitchen, I'm reminded of my own childhood. On a rainy day, nothing beats a fried banana fritter. We'd eat them with relish, sharing stories about school and class. These childhood tales flowed along with the rhythm of the rain falling outside the window.

Life is so busy these days, it's not difficult to find fried banana fritters at street stalls or in the market. But the taste of the old days can only be found in the fried banana fritters made in a family kitchen!
