"Variations" with durian

Dubbed the "king" of tropical fruits, durian has a distinctive flavor and aroma, and can be enjoyed fresh or transformed into a variety of unusual yet equally appealing dishes.

Ms. Nguyen Thi Thoa, a baker in Buon Ma Thuot City, shared that to enhance the rich, creamy flavor of this fruit, people have created countless delicious dishes such as durian sweet soup, cakes, ice cream, yogurt, smoothies, sticky rice, and jelly... In particular, durian crepe is a favorite and sells out quickly whenever durian season arrives. This is a combination of crepe, fresh cream, and durian, creating a unique dessert.

These smooth, firm cakes with a chewy crust (made from flour, sugar, eggs, and fresh milk), combined with the rich, fragrant cream and finely mashed durian filling, are served chilled and will awaken all your senses.

Besides that, durian avocado ice cream is also an extremely delicious treat for those with a sweet tooth. It's a perfect combination of fresh cream, avocado, and pureed durian pulp. The blend of ingredients creates a dessert that is both sweet, fragrant, and rich.

Durian crepe.

As a passionate cook, during durian season, Ms. Nguyen Thi Nhung (Dlie Ya commune, Krong Nang district) often experiments with preparing dishes from this fruit for her family to enjoy. She also "creates" many unique and delicious dishes from durian using recipes she has researched and developed herself.

For example, to make fried durian cake, she separates the durian flesh, mashs it finely, and mixes it with condensed milk. Then, she scoops the mixture and spreads it evenly onto a rice paper wrapper, rolling it into her desired shape; she dips the cake in a pre-mixed batter and fries it in hot oil until golden brown on all sides.

The finished product is a crispy, sweet, and fragrant durian cake. Instead of discarding the unripe, overripe, or tough durians from her garden, Ms. Nhung uses them as a substitute for other vegetables, simmering them with pork ribs to create a unique durian and pork rib soup. The rich, fragrant durian blends perfectly with the savory pork rib broth, resulting in a surprisingly delicious flavor.

Furthermore, she also utilizes the durian peel, removing all the thorns and outer skin, separating the white flesh, slicing it into bite-sized pieces, blanching them briefly in boiling water, then dipping them in a mixture of flour and crispy batter and frying until golden brown on both sides. The crispy, nutty taste of the fried durian flesh, when dipped in chili sauce, creates a delightful snack...

Many people enjoy grilling durian over charcoal to experience an enhanced sweetness and richness when eating it.

To grill durian, simply prepare a blazing charcoal grill and place a whole ripe durian on it. While grilling, turn the fruit evenly; the rind will automatically expand and gradually char over a dark color. The hot durian segments are fragrant with their soft, creamy flesh, and the smoky charcoal aroma blends with the fragrant durian pulp, creating an irresistible scent. Scoop small spoonfuls while still hot to fully appreciate the flavor. Alternatively, you can grill the whole durian, separating the segments and wrapping them in foil before grilling. The result is a chewy, slightly charred rind encasing the soft, creamy durian pulp inside.

As can be seen, with many different ways of preparing and enjoying it, dishes made from durian have become diverse. The strong aroma and sweet, creamy taste of durian are a special "highlight," making it hard for fans of this fruit to resist.
