Ingredient:

- Pig tail

- Ginger, onion, peanuts

- Salt, fish sauce, sugar, garlic, chili, ginger, onion, peanuts, tamarind, kumquat.

Making:

- Wash the pig's tail thoroughly and let it drain. Then boil the tail on the stove with ginger to remove the fishy smell. Next, take the tail out, wash it and pat it dry with paper towels. Mix lime juice with 2 teaspoons of salt, spread this mixture on the pig's tail and dry it in the sun for 2-3 hours until the tail is completely dry. You can use a hair dryer to dry the pig's tail if you don't have time to dry it in the sun.

- Put the pig's tail in the air fryer, set to 200 degrees for 30 minutes, turn over. When the pig's tail is crispy and golden brown, it's done. Wait for it to cool and cut into bite-sized pieces.

- Wash the garlic, chili, and onion with water and chop finely. Soak tamarind in boiling water and then filter to get the tamarind pulp. Roast peanuts, peel and crush with a pestle. Fry onion and garlic until golden brown and fragrant.

- Put the pot on the stove, boil the mixture of tamarind, fish sauce and sugar. Boil until the sugar has dissolved, then turn off the stove and let cool.

Finally, add the fried onion and garlic, minced chili, and peanuts to the above mixture and mix well to have a delicious and flavorful dipping sauce.
