Kimchi pancakes are a famous Korean spicy dish with a distinctive sour and spicy flavor.

Here's a simple recipe for making kimchi pancakes at home.
Ingredient
- Wheat flour (baking powder): 175 g
- Cornstarch: 200 g
- Napa cabbage kimchi: 100 g
- Seasoning: Korean red chili paste (gochujang), vegetable oil
- Onions: 2 bulbs

- Step 1 : Drain the kimchi and chop it finely. Wash the onion and chop it finely.

- Step 2 : Put the flour in a bowl, add 200 ml of ice-cold water and kimchi juice. Beat well until a smooth batter is formed.
- Step 3 : Mix the kimchi, gochujang chili paste, and onion with the flour mixture. You can add a tablespoon of flour if you need it to be thicker.

- Step 4: Place a non-stick pan over high heat with a little vegetable oil. Scoop the pancake mixture into the pan. Use the back of a spatula to spread the mixture evenly, forming a thin, even layer. Reduce the heat to medium-high. Fry for 2-3 minutes, or until bubbles begin to rise to the surface and the sides start to crisp.
- Step 5: Flip the pancake, gently lift the top with a spoon, and add another tablespoon of oil underneath. Shake the pan to ensure the oil coats the bottom of the pancake evenly. Press down on the pancake with a spoon to ensure it becomes crispy. Fry for another 2 minutes.

- Step 7: Flip one last time, press the pastry down again, and fry for 30 seconds. Drain off excess oil on paper towels and keep warm in the oven.
