In Nhat Hoa commune, Bac Son district, the family of Mr. Duong Than Sang in Gia Hoa 2 village has been making dried rice noodles for over 10 years. Mr. Duong Than Sang shared: "Since 2005, my family has been producing dried rice noodles, mainly to serve the needs of my family and people in the commune. Starting from 2016, recognizing the increasing market demand, my family has expanded production to increase income and supply products to customers inside and outside the province."
To produce high-quality dried rice noodles, the selection of ingredients is paramount. Specifically, the rice used must be locally grown Bao Thai rice, carefully chosen to ensure the resulting product is chewy, soft, fragrant, sweet, and flavorful. The process of making dried rice noodles is also meticulous. The rice is soaked for three nights, then thoroughly washed and ground into flour. Next, the flour is kneaded and then processed in a machine to separate the strands, which are then cut into uniform strands of 70 to 80 cm. The final step involves letting the noodles rest overnight to loosen them, then drying them in a shady, breezy place.
To improve product quality, in addition to focusing on the raw materials for making vermicelli, the facility has proactively created the conditions to develop an OCOP (One Commune One Product) product. Specifically, the facility has built a 150m2 workshop including a production area, a covered drying area, and drying racks; invested in machinery such as a flour mill, kneading machine, and stuffing machine (costing over 200 million VND); and developed packaging and labels for the product. Notably, the product has been certified for food safety.
Thanks to following a traditional process and secret family recipe, the rice noodles from this facility, after boiling, are as soft as fresh noodles and have a fragrant rice aroma. Currently, the facility's dried rice noodles are not only consumed within the province but also expanded to other provinces and cities such as Bac Giang, Hanoi , and Dong Nai... On average, the facility produces 6-8 tons of dried rice noodles annually.
Ms. To Xuan Quynh, from Nhan Chinh ward, Thanh Xuan district, Hanoi, said: "Previously, when I had the opportunity to visit relatives in Bac Son district, I had the chance to enjoy the dried rice noodles from Nhat Hoa commune. I was very impressed because the dried noodles were very soft, chewy, and had a distinctive aroma of rice. Dried rice noodles can also be used to prepare many dishes. In particular, I find the dried rice noodles very convenient because they can be stored for a long time, so I often order them to eat and give as gifts to relatives."
Mr. Pham Ba Hanh, Head of the Agriculture and Environment Department of Bac Son district, said: "In recent times, Mr. Duong Than Sang's family production facility has supplied dried rice noodles to markets inside and outside the province. In particular, with proactive investment and improvements in product quality, the dried rice noodles have recently been evaluated and achieved OCOP 3-star standard. To date, this is also the only dried rice noodle product in the district that has achieved OCOP standard."
With initial successes in product development and brand building, in the coming time, Mr. Duong Than Sang's family's dried rice noodle production facility will continue to expand production scale, invest in more drying machines to supply traditional dried rice noodles to the market in larger quantities; at the same time, actively participate in OCOP product exhibitions, access consumption channels, especially on e-commerce platforms. Through this, it will help increase income and create jobs for many local workers, contributing to elevating and expanding the market for traditional dried rice noodles.
