What to eat
Ninh Hoa spring rolls are a must-try dish when visiting this town. Compared to spring rolls from other places, Ninh Hoa spring rolls are wrapped with star fruit leaves inside to create a sour taste and then wrapped in banana leaves.

When eaten at the restaurant, the spring rolls are grilled over charcoal and served with fresh vegetables, unripe bananas, and sour starfruit. The dipping sauce is made from ground rice and peanuts, giving it an attractive yellow color.
In Ninh Hoa, fish noodle soup is sold in many places throughout the town. The type of fish used to make this dish is flagfish because of its sweet and firm flesh. Before cooking, the fish bones are removed and the fish is minced into small pieces. The broth of fish noodle soup is considered to be not fishy and low in fat.
The rice noodles used in this dish are made in Thanh My village (Ninh Hoa town), with thin strands arranged on banana leaves in bite-sized portions. Currently, in addition to fish, many eateries also add jellyfish or fish cake to enhance the flavor.
Speaking of Ninh Hoa's specialties, one cannot miss the famous "duck wading in the water" dish from Ninh Than commune. Due to abundant rice harvests, farmers here release ducks into the fields to eat leftover rice and improve the soil. As a result, the duck meat is lean and low in fat. Duck wading in the water is prepared into dishes such as roasted duck, duck noodle soup with bamboo shoots, or duck porridge.
The final specialty is fermented fish guts. The guts of large fish such as striped catfish, mackerel, and barracuda are cleaned and then fermented with salt in the sun for about a week. This type of fermented fish is best eaten with boiled meat and white rice, wrapped with fresh vegetables.
