When eaten at the restaurant, the spring rolls are grilled over charcoal and served with raw vegetables, green bananas, and sour star fruit. The dipping sauce for this dish is made from ground rice and peanuts, and has an eye-catching yellow color.
In Ninh Hoa, fish noodle soup is sold in many places in the town. The fish used to cook this dish is swordfish because the meat is sweet and chewy. Before cooking, people will remove all the bones of the fish and pound it into small pieces. The broth of fish noodle soup is considered not fishy and has little oil.
The vermicelli used in the dish is made in Thanh My village (Ninh Hoa town) with small vermicelli, placed on banana leaves in bite-sized portions. Currently, in addition to fish, many restaurants also add jellyfish or fish cakes to enhance the flavor.
When talking about specialties in Ninh Hoa, you cannot miss the famous wading duck in Ninh Than commune. Due to many bumper rice crops, farmers here release ducks into the fields to eat the remaining rice and improve the soil. Thanks to that, the duck meat is lean and has little fat. Wading duck will be processed into dishes such as roast duck, duck bamboo shoot vermicelli or duck porridge.
The last specialty is the intestine fish sauce. The intestines of large fish such as striped catfish, octopus, and mackerel are cleaned and then left to ferment in salt in the sun for about a week. This type of fish sauce is best eaten with boiled meat and white rice, rolled with raw vegetables.
