Beyond religious reasons, the trend of vegetarianism on special occasions such as the full moon and the beginning of the lunar month is increasingly attracting many people – both young and middle-aged – due to their desire to maintain a healthy lifestyle, improve their health, and include vegetables in their diet.
The number of customers visiting vegetarian restaurants and chains in both of these major cities is usually much higher than usual, consuming everything from basic dishes like vegetarian rice, mushrooms, and tofu to a wider variety of specialty dishes.

In Hanoi , vegetarian restaurants also saw a surge in customers in the days leading up to the full moon, with many families pre-ordering vegetarian meals to prepare for the full moon day, resulting in a dramatic increase in sales compared to the previous month.
Culinary and health experts believe that the increase in customers at vegetarian restaurants during the full moon of the first lunar month stems not only from traditional vegetarian beliefs but also indicates that vegetarian cuisine is becoming a popular choice in modern urban life – where people are increasingly concerned about nutrition, disease prevention, and lifestyle balance.
Forecasts indicate that during other major holidays such as Vu Lan, religious festivals, or the beginning and middle days of the lunar month, the demand for vegetarian cuisine will continue to be a highlight of the Vietnamese food market, opening up opportunities for sustainable development for vegetarian food service businesses in major cities.
