We should choose long bitter gourds with evenly spaced, well-developed spines so that they are easy to stuff with meat. To cook bitter gourd soup without it tasting bitter, in this preparation step, you need to prepare a bowl of clean water with a little salt.

Cut the bitter melon into bite-sized pieces and use a spoon or small knife to remove the seeds. Then soak the bitter melon in salt water for about 20-30 minutes; you can add ice to the soaking water to make the skin crispier.

Heat oil in a pan, add the bitter gourd and stir-fry until cooked. Then add the eggs and stir quickly, season to taste, and continue stirring until the eggs are cooked through.

Bitter gourd soup with shrimp

Bitter gourd: 3; fresh shrimp: 200g; minced pork: 100g; spices, scallions, cilantro, pepper… Wash the bitter gourd, remove the seeds, and cut into sections. Peel the shrimp and remove the vein from the head and back, then grind or finely chop them. Mix the minced pork with the shrimp, season, and stuff into the bitter gourd sections.

Bring a pot of water to a boil, add the stuffed bitter gourd, and continue cooking until the bitter gourd is tender and the shrimp is cooked through. Add seasonings, onions, cilantro, and pepper to create a delicious, nutritious, and fragrant soup.

Stir-fried bitter melon with pork

Two bitter gourds, 100g lean pork. Wash the bitter gourds, remove the seeds, and slice thinly. Slice the lean pork thinly and marinate with spices. Heat oil in a pan, then add the pork and stir-fry until cooked through. Add the bitter gourd and continue stir-frying until cooked through. Season to taste and serve hot with rice.
