NU ĐỒ Quang noodle restaurant, located in Da Nang City, has just been included in the list of Michelin-starred eateries.

Still using rice flour as its main ingredient, NU DO noodles retain the authentic taste of the countryside through their white, soft, and chewy noodles. To enhance the flavor and create a unique dish, Tuyet Pham has researched and adapted NU DO noodles based on the culinary experience of her grandparents as well as variations reflecting the tastes of a young person. Therefore, NU DO noodles embody the elements of delicious food, a story of the homeland, and a focus on health.

The deliciousness of noodles isn't just about taste. The story of freshly roasted peanuts, turmeric, and finely ground white rice elicits amazement at the secrets behind regional cuisine.

In particular, the inspiring story of Tuyet Pham's entrepreneurial journey is the final touch that makes the NU DO noodle experience even more complete. The process of creating a bowl of NU DO noodles is also Tuyet Pham's journey of reliving her childhood, leaving home, experiencing, and growing up.

Tuyết Phạm rose to prominence through the MasterChef competition – an internationally recognized culinary competition known for its professionalism. However, she herself is a native of Quang Nam province, having grown up with her mother's humble noodle stall.

In her journey to create NU DO, Tuyet Pham pursued two parallel paths: outward expansion and inward return. Her outward expansion also involved numerous mistakes and misconceptions.

At times, Tuyet is like a child joyfully receiving a gift from someone else; at other times, she is like a young person eager to explore new horizons without fully understanding the guide. Leaving aside theory, Tuyet is now more at peace with what comes and goes.

Alongside the outward-looking aspects of business, the journey inward is equally challenging. The nascent stages of NU ĐỒ coincided with the journey of a young girl named Tuyết searching for herself in the post-childhood world.

After two years, especially in the post-COVID era, it was a journey of departure to find simplicity. Now, five years later, NU DO stands firmly on its own two feet, and plans for NU DO 2 are about to begin.

NU DO's baggage at this point was incredibly light. The experience and knowledge about Quang noodles that Tuyet had accumulated had transformed into everyday details and experiences.

“I want to bring the flavor of NU DO not just as food, but also as an experience, an emotional journey. Guests will come to NU DO with the story and return with the emotions and flavors.”

That's why Tuyet positions her customers as people with experience and a role in society, who seek out the flavors of NU DO to satisfy their taste buds, and then continue their work more creatively. When using a branded product, the customers themselves also affirm their own brand," Tuyet Pham shared.

NU ĐỒ is a brand that evokes emotions, but behind it lies a great deal of reason, effort, and perseverance. The emotions forged through reason are the most complete and worthwhile to experiment with.
The greatest gift for Tuyet Pham and her colleagues was the Michelin award, which came at the same time as NU DO's 5th anniversary.

Michelin stars have transcended the function of a mere award and become a trusted standard for evaluating the quality of restaurants and the skills of chefs. Achieving a Michelin star is difficult, and maintaining one is even more challenging. With this award, Tuyet Pham has gained even more confidence in herself and the path she is taking.

Currently, Tuyet Pham has launched a jar of sauce with the NU DO flavor. The next step is to research the production process to mass-produce it so that the NU DO flavor can reach a wider audience of Vietnamese family kitchens, Vietnamese people abroad, and even foreigners who love Vietnamese cuisine. Tuyet Pham's long-term goal is to connect with farms and attract investors to expand the scale of NU DO.
