Dishes made from pork trotters are very diverse and abundant. Especially during Tet (Lunar New Year), many families often have braised or stewed pork trotters with bamboo shoots, braised pork trotters with medicinal herbs, or pork trotters marinated in fish sauce… These dishes are all nutritious and delicious; however, many people still don't know how to choose the right pork trotters to prepare suitable dishes.

There is a clear distinction between front and hind trotters, and the taste of these two types of trotters also differs. Because they often bear the weight of the body and move relatively frequently, front trotters are larger, coarser, and slightly curved, with thicker meat and more pronounced wrinkles on the surface. Hind trotters, which primarily support movement and bear less weight, are relatively thinner and straighter, with less meat and fewer wrinkles on the surface. Similarly, pig's hooves usually have four toes, but when moving, only two are on the ground. The toes of the front trotters are relatively large and uniform in size, and appear smoother. The two toes of the hind trotters are coarser and of uneven size.
In short, it's not difficult to distinguish between front and back pork trotters. Front trotters have thick, sinewy meat, are chewy and delicious, and are suitable for braising, roasting, or grilling. Back trotters have less meat and larger bones, and are usually used in soups and stews.
Besides popular pork knuckle dishes like hu tieu, banh canh, bun rieu, and bun bo gio heo, Bac Lieu also has a restaurant specializing in a delicious braised pork knuckle dish. Located in Ward 3 (Bac Lieu City - near the old Cao Van Lau Theater), the restaurant only sells in the afternoons. The meat is flavorful, and the sauce is richly seasoned, with a creamy, slightly spicy, and harmoniously balanced salty and sweet taste. Depending on the customer's preference, the vendor will serve a portion of braised pork knuckle with noodles, hu tieu, bread, or fried dough sticks... it's incredibly addictive!
