
Choose mature winter melons with a powdery coating on the skin for the best flavor; unripe ones will not produce the same delicious result. Wash away any powdery or prickly coating on the skin. Cut the melon in half or lengthwise, remove the seeds, and cut into pieces of any size you like. Divide the melon into two parts: keep one part whole and dry the other. Then, put a handful of dried melon into an oven or air fryer and bake until slightly golden brown.
Choose a few large, dry jujubes (usually one jujube per liter of filtered water; using more will make the water sour). Soak the jujubes in boiling water for about 15 minutes. Similarly, soak two heaping tablespoons of dried longan in boiling water for 15 minutes to remove any dirt. Crush one dried luohan fruit to break the outer shell. These ingredients are available at traditional Chinese medicine shops. To give the winter melon water a naturally sweet flavor, add a few pieces of washed and thinly sliced sugarcane. You can also add a handful of washed lime roots if desired.
After preparing everything, put all the ingredients into a pot, including winter melon, luohan fruit, apples, longan, sugarcane, and lime root. If the winter melon weighs 2kg, use 5 liters of water. Cover tightly and cook over high heat until the water boils, then slightly open the lid, reduce the heat, and simmer until the winter melon is soft and the liquid becomes clear. During cooking, occasionally open the lid to release steam and gently stir with a ladle to avoid crushing the ingredients, which would make the liquid unclear. Then, add a little filtered water. When all the ingredients have released their sweetness, remove the solids, strain the liquid, and add a little rock sugar or brown sugar according to your preference. Taste and adjust the amount of sugar to your liking. The winter melon drink will have a sweet and slightly sour taste from the apples; if you don't like sourness, you can omit the apples.
It's still winter melon juice, but some people like to combine it with rehmannia root, rock sugar, and pandan leaves; others don't add sugar because they think longan and sugarcane are sweet enough, only adding corn silk and a few chia seeds when drinking... In general, if you choose the ingredients yourself, cook it yourself, and adjust the sweetness to your liking, then a glass of winter melon juice will always be delicious and healthy!
