Cooking red bean sweet soup is very simple, but it requires soaking the beans for at least 6 hours – overnight is even better. Once the beans have expanded and softened, rinse them with clean water, remove any damaged or spoiled beans, and put them in a pot. If your rice cooker has a "simmering" function, it's much easier; the cooker automatically adjusts the temperature, ensuring the beans are cooked until soft but still intact. Otherwise, put the pot on the stove, make sure the water covers the beans, add a little salt, and simmer over medium heat for 40-50 minutes until the beans are soft. Then add sugar. Adjust the amount of sugar according to your preference for sweetness. Cook for a little longer to allow the sweetness to penetrate the beans, stirring sparingly to prevent them from breaking apart. Once the beans have absorbed the sugar, dissolve a little tapioca starch (or cassava starch) in water and gradually pour it into the pot, stirring constantly to prevent lumps. Stir until the soup boils again and the mixture becomes translucent, then turn off the heat.
You can add homemade coconut tapioca pearls to the dessert by: kneading tapioca flour with hot water until the dough is no longer sticky. Break off small pieces of dough, stuff diced young coconut in the middle, roll into balls, drop into a pot of boiling water and cook until the balls float to the surface, then remove and soak in a bowl of cold water before adding them to the dessert.
The next step is to prepare the coconut milk sauce. You can use canned coconut milk or buy pre-pressed coconut milk from the market; if using canned, reduce the amount of cornstarch used. Pour 400ml of coconut milk, sugar, a pinch of salt, and cornstarch into a saucepan, place on the stove, and stir until the mixture thickens (do not boil for too long to avoid the oil from crystallizing).
When eating, scoop the dessert into a bowl (if serving hot) or put it in a glass, then add coconut milk and shaved ice to enjoy. You can adjust the amount of coconut milk to your taste.
