Red bean coconut milk dessert

A rustic dish, suitable for hot summer days, red bean sweet soup is a wonderful combination of sweet red beans and fragrant, fatty coconut milk.

How to cook red bean sweet soup is also very simple, but it takes time to soak the beans for at least 6 hours - can soak overnight. When the beans have expanded and softened, rinse them with clean water, remove any damaged or rotten beans, then put them in the pot. If the rice cooker has a "simmer" function, it is very easy, the pot automatically monitors the temperature, the beans are soft but still whole. Otherwise, put the pot on the stove, the water must cover the beans, add a little salt, adjust the heat to medium and simmer for 40 - 50 minutes, until the beans are soft, then add sugar. Depending on your taste, you like more or less sweetness, adjust the amount of sugar accordingly, cook for a while so that the sweetness penetrates deep into the beans, limit stirring to avoid breaking the beans. When the beans have absorbed the sugar, dissolve a little tapioca starch (or tapioca starch) with water and slowly pour it into the pot of beans, while pouring, stir constantly to prevent the powder from clumping, stir until the pot of sweet soup boils again, the powder is clear, then you can turn off the stove.

You can add handmade coconut pearl topping to the dessert by kneading tapioca flour with hot water until the dough is not sticky. Break off small pieces of dough, stuff diced young coconut in the middle, roll into balls, drop into a pot of boiling water and boil until the dough floats to the surface, then remove and soak in a bowl of cold water and then drop into the pot of dessert.

The next step is to prepare the coconut milk to serve with it. You can use canned coconut milk or buy pre-pressed coconut milk at the market, if you use canned coconut milk, reduce the amount of powder used. Put coconut milk (400ml), sugar, a little salt and cornstarch in a pot, put on the stove, stir well until the mixture thickens (do not boil for too long to avoid oil).

When eating, scoop the dessert into a bowl (if served hot) or into a glass, add coconut milk and shaved ice to enjoy. You can adjust the amount of coconut milk to taste.
