In his work " Hanoi: Thirty-Six Streets," Thach Lam wrote: “In Hanoi, people don't just eat to satisfy their hunger, but also to savor and subtly appreciate the wonderful flavors of the food. Eating in Hanoi is a delicacy, a cultural enjoyment, not just to satisfy the stomach, but also to satisfy the soul. The flavors of Hanoi's dishes evoke memories, warm and familiar feelings, and remind people of a past full of cherished moments.” Walking through Hanoi's streets early in the morning, it's easy to spot pho stalls with steaming bowls of pho, the sweet aroma of the broth wafting through the air.
