After many years of working in the South, in 2013, Ms. Nguyen Thi Thuy (born in 1984) and her husband, Mr. Truong Xuan Cao (born in 1984, residing in Binh Ly village, Thach Binh commune, Ha Tinh city) returned to their hometown to start a business with ham and sausage. After a while, realizing that if they only made traditional ham and sausage, they would not create a unique highlight for the brand, Ms. Thuy and her husband decided to research and learn to make five-color ham.

To realize the above plan, Mr. Cao searched for information online and then returned to the South to learn the recipe and how to process the product. In 2021, when he was confident in his skills, Ms. Thuy and her husband started making Cao Thuy five-color pork roll and brought the product to the market.

Five-color ham is made mainly by hand with the main ingredients being pork paste and other vegetables. A piece of Cao Thuy five-color ham includes soft pork paste, fatty salted eggs, soft spongy peas, the sweetness of carrots mixed with the aroma of wood ear mushrooms, shiitake mushrooms and a layer of fried golden eggs on the outside, all combined to create a special flavor and create the appeal of the product.

According to Mr. Cao, to have a standard five-color pork roll product, the selection of raw materials is extremely important. The raw materials for making the roll must always ensure food safety and hygiene standards. Pork, eggs, vegetables, etc. are all taken from clean agricultural stores in the area.

To build the brand and bring Cao Thuy five-color pork roll to customers, Ms. Thuy and her husband boldly invested more than 300 million VND to purchase machinery and equipment to create a closed production process, ensuring food safety and hygiene standards.

Ms. Thuy shared: “With the desire to make our products known to many people, in addition to investing in machinery and improving product quality, we always determine that food safety and hygiene must be our top priority, resolutely saying no to borax and additives. Not only five-color pork roll but also other products such as pork roll and sliced ​​pork roll are strictly checked for input materials and output products to maintain our reputation with customers.”

Cao Thuy five-color pork roll has been recognized as a 3-star OCOP product.

After 2 years of producing five-color ham, Ms. Thuy and her husband boldly registered to participate in the "One Commune One Product" (OCOP) program to affirm product quality and create opportunities to expand the consumption market. In May 2023, the OCOP Product Evaluation and Classification Council of Ha Tinh City recognized the Cao Thuy five-color ham product as a 3-star OCOP, creating the premise to bring the product to the "big sea".

It is known that each month, the production facility of Ms. Thuy and her husband sells about 2 tons of ham to the market; of which, the five-color ham accounts for about 30%. With the selling price of 220,000 VND/kg of five-color ham, on average each month, the facility earns more than 130 million VND, with a profit after deducting expenses of about 30 million VND.

Mr. Cao plans to invest in more machinery to optimize the production process.

As a customer who has used the five-color ham product, Mr. Nguyen Van Long (Cam Quang commune, Cam Xuyen) said: "In the locality, five-color ham is a fairly new dish. I find Cao Thuy five-color ham very different from other types of ham, with a very unique aroma and eye-catching colors. In particular, when the product is recognized as a 3-star OCOP, it helps consumers feel secure about the quality."

Talking about her upcoming plans, Ms. Thuy shared: “I will invest in purchasing more modern equipment to reduce labor costs, optimize the production process to reduce product costs while still maintaining quality and ensuring food safety and hygiene factors. At the same time, we will continue to expand the consumer market, bringing products closer to consumers.”

The novelty and beauty of Cao Thuy five-color ham has helped the product be well received by many consumers.

Evaluating the Cao Thuy five-color ham product, Vice Chairman of the People's Committee of Thach Binh Commune, Tran Huy Tien, said: "Different from traditional ham, the five-color ham of Mr. Cao and Ms. Thuy has created a difference in the form and flavor of the product. From the initial success of the five-color ham product, the locality will continue to support Ms. Thuy's family in developing and introducing the product to customers near and far."
